Freeze-Dried Mango Powder or Spray-Dried: Which One Is Your Formula Actually Buying?
Freeze-dried mango powder is mango (Mangifera indica L.) that has been freeze-dried and then milled, with nothing added: no carrier, no sugar, no anti-caking agent unless you ask for one. It sits in the freeze-dried fruit range alongside freeze-dried mango pieces.
Open a bag and you see it straight away: a bright golden-yellow powder that smells of ripe mango, not of a flavoring. Stirred into milk or a smoothie it gives an orange-gold color and a thick, pulpy body, because the fruit’s own fiber is still there. That is the difference a customer tastes and the reason brands pay more for it.
Two powders sold as “mango powder” can behave very differently in your product. What decides the choice is what else is in the bag, what you can print on the ingredient list, and how fast the powder cakes once the bag is open. FruitBuys freeze-dried mango powder ships at 100% mango, 3–5% moisture, water activity ≤0.30, total plate count ≤10,000 CFU/g and yeasts and moulds ≤100 CFU/g, milled to 60–80 mesh.

What is the real difference between freeze-dried and spray-dried mango powder?
Freeze-dried powder is milled from dried fruit; spray-dried powder is liquid mango sprayed into hot air, and it needs a carrier to dry at all. Mango sugars turn sticky in a hot chamber. To keep the powder from coating the dryer walls, spray-drying blends in typically 15–30% maltodextrin (DE 10–15), which raises the glass transition temperature of the mix so particles stay dry. That carrier is part of the ingredient you buy.
| What you care about | Freeze-dried powder | Spray-dried powder |
| What is in the bag | 100% mango | Mango plus typically 15–30% maltodextrin |
| Ingredient line | “Mango” or “freeze-dried mango” | “Mango, maltodextrin” |
| Flavor and color | Close to fresh fruit, no heat step | Lighter, diluted by the carrier |
| Flowability | Needs dry handling or an anti-caking agent | Flows more easily thanks to the carrier |
| HS direction | 1106.30, powder of Chapter 8 fruit | Usually outside 1106 once a carrier is added, often Chapter 21 |
| Cost per kg of mango | Higher | Lower, because part of every kilogram is carrier |
What this means for you: a “100% fruit” or “no additives” claim needs a carrier-free powder. For a low-cost color and flavor base in a beverage mix, spray-dried can be the better fit.

Why does a “100% mango” spray-dried powder deserve a second look?
Because spray-drying mango without a carrier is not workable at commercial scale, so a “100% mango” spray-dried label is almost always a mislabelled ingredient declaration. If the carrier is missing from the label, the error becomes yours at launch: a relabel at best, a non-compliance finding at worst. Ask any spray-dried supplier for the full formula with percentages and the lot production record. FruitBuys’ own spray-dried mango powder is made with maltodextrin and declares it; compare it with our freeze-dried mango powder side by side.

Which particle size should I specify?
60–80 mesh for most drink and dessert mixes; finer only if your process needs it.
| Mesh | Particle size | Behavior | Best for |
| 20–40 | about 420–850 µm | Granular, slow to disperse | Toppings, coatings, visible specks |
| 60–80 (FruitBuys standard) | about 180–250 µm | Disperses in 30–60 seconds, resists clumping | Smoothie and beverage mixes, yogurt and dessert powders, bakery creams |
| 100–120 | about 125–150 µm | Very fine, but clumps fastest when wetted or exposed to humid air | Specific beverage or capsule processes, on request |

Why does mango powder cake, and how do I stop it?
Milling multiplies the surface area, so pure mango powder pulls moisture from the air much faster than pieces. Opened in a room above 60% RH, it starts to clump within about 20–30 minutes. You have two clean choices:
- Clean label. Keep the powder 100% mango, buy it in small foil-laminate bags of 1–5 kg that are used up in one shift, and open them in a room below 35% RH. Reseal at once.
- Free-flowing. Add 1–2% silicon dioxide as an anti-caking agent. It flows through dosing equipment without bridging, but it goes on your label and can change the HS classification, so decide before you order.
Whichever you choose, specify moisture and water activity on the same sample at packing, and a barrier pouch with stated test conditions. The mechanism is the same as for crisp pieces, explained in why freeze-dried mango arrives soft; pouch and seal choices are in our packaging and shelf-life guide.

Where does freeze-dried mango powder earn its cost?
Where the mango is the labelled hero of the product.
- Smoothie and beverage mixes (5–12%): natural orange-gold color and a pulpy body that maltodextrin-based powders lose to dilution
- Yogurt, ice cream and dessert powders (5–12%): a tart, fresh-fruit note that cuts dairy richness
- White chocolate and compound coatings (3–8%): under 5% moisture, it colors and flavors white chocolate without thickening the mass
- Bakery creams and fillings (4–10%): fruit color and flavor from one ingredient, with no added sugar to rebalance
- Baby and toddler puffs and melts (5–15%): a one-word ingredient line, “mango”, with no carrier or refined sugar, which is what these briefs ask for first
- Supplement blends: fruit flavor that sits on the label as fruit, not as a flavoring
The percentages are pilot starting doses; FruitBuys adjusts them with your R&D team for color depth and flavor in your base. For recipe ideas, see freeze-dried mango powder recipes. Where visible pieces matter, compare cuts in our applications guide.

When freeze-dried powder is the wrong choice
If the mango sits behind other flavors, if price per kilogram decides the brief, or if your plant cannot keep powder dry once opened, a spray-dried powder or a mango purée will serve you better. If you are choosing between drying methods for pieces, start with freeze-dried or dried mango.
FAQ
Is freeze-dried mango powder just ground freeze-dried mango? Yes. Freeze-dried mango milled to 60–80 mesh, with nothing added unless your specification asks for an anti-caking agent.
Does it dissolve in water? It disperses in about 30–60 seconds at 60–80 mesh; the fruit fiber stays in suspension rather than dissolving fully.
Can it be supplied under our brand? Yes. Start with the freeze-dried mango powder product page or our Vietnam freeze-dried mango supply overview.
