What should you check before buying freeze-dried avocado in bulk from Vietnam?
Five things: where the fruit comes from, what the product leaves behind on the way to you, how quality is held from the first container to the last, what lands at your port and what it costs to clear, and whether the supplier can show all of it before you pay a deposit. Vietnam’s Central Highlands grow butter avocados at scale, and FruitBuys turns them into 100% pure freeze-dried avocado in slices, dices and granules, dried to 2–4% moisture and water activity ≤0.30, shipped in a standard dry container with 0% duty into the EU and UK on Form EUR.1. This guide walks through each check and ends with the 10-point list to run on any supplier, FruitBuys included.
Why now: 2026 showed how exposed a fresh-avocado programme is. In the US, fresh Hass prices fell to multi-year lows in April, then major importers declared supply force majeure by late May as Mexican volumes tightened. A freeze-dried programme packed at the Central Highlands peak takes that swing out of your costing: you fix annual volume and price once, and call off containers on your own schedule.
Why buy freeze-dried avocado instead of frozen pulp?
Because you stop paying to move and store water at −18 °C. Frozen avocado pulp travels in a reefer, sits in your freezer and loses quality every time the cold chain wobbles: a power cut in the warehouse, a delayed reefer plug-in at transhipment, or browning and weeping when it thaws on your line.
Freeze-dried avocado takes the cold chain out of the equation.
- Standard dry container, no reefer, no temperature logger, no plug-in charges.
- Ambient storage: 12 months at ≤25 °C, RH ≤60%; 18–24 months in cool storage at ≤18 °C, RH ≤50%.
- Freezer space freed for the ingredients that truly need it.
- No thaw loss: open the bag and dose. One kilogram rehydrates to about 4–4.5 kg of soft avocado with cold water.
- About 78% less weight to ship than the frozen pulp it replaces.
The yield behind the price, the cost-in-use comparison and the formula your finance team fills in are in how many kilos of fresh avocado make 1 kg of freeze-dried.
Where does the fruit come from, and will supply hold for 12 months?
From the Central Highlands, Lam Dong and Dak Lak, the heart of Vietnamese avocado. Two local butter varieties carry the volume: 034, a long, large fruit with a small seed for its size, named after the entry number of the tree that took the top award at the 2009 Bao Lam avocado competition in Lam Dong, and Booth 7, firm and dense. Their firm flesh dices clean into sharp 5 mm and 10 mm cubes, and 70–80% of each 034 or Booth 7 fruit becomes usable flesh.
The main harvest runs May to September, with off-season and staggered plantings filling much of the rest of the year. FruitBuys packs annual stock at peak season, when flesh quality and fruit availability are both at their best, so the avocado you approve in July is the avocado you receive in March. The variety and harvest period of each lot sit on the specification and the batch traceability record. How they compare with Hass, the reference most Western buyers know, is in 034 and Booth 7 vs Hass.
What keeps quality the same from the first container to the twelfth?
A fixed facility, fixed limits and a sample you can hold the bulk against.
- One locked facility per contract. FruitBuys qualifies one processing facility for your contract and keeps it there. Any change of facility is notified in writing in advance and the pre-shipment sample is re-approved. Your team has audit access.
- Release limits on every lot: moisture ≤5.0%, aw ≤0.30, fines ≤5%, total plate count ≤10⁴ CFU/g, yeasts and moulds ≤10² CFU/g, E. coli <10 CFU/g, Salmonella not detected in 25 g.
- Lot COA for every container from an independent ISO/IEC 17025 accredited third-party laboratory: moisture, water activity, TPC, yeasts and moulds, E. coli and Salmonella. Lead, arsenic and aflatoxin are monitored on a fixed surveillance schedule, with reports available on request.
- Pre-shipment sample of 100–200 g from the packed lot, in two sealed foil pouches with desiccant, couriered within 24–48 hours.
- Retained sample from every container lot, kept for the full shelf life.
- Facility certifications: HACCP, ISO 22000, BRC (qualified processing facility) and US FDA Facility Registration, with Halal certification available on request; copies sit in the technical file before signature.
Fruit is cut firm-ripe and frozen straight after cutting, then sealed in foil bags with a soft vacuum and silica gel desiccant. How each control keeps the avocado crisp, green and fresh-tasting through storage is in how freeze-dried avocado stays crisp, green and fresh-tasting through storage.
How much fits in a container, and what does it cost to clear?
| 20 ft dry container | 40 ft HC dry container | |
|---|---|---|
| Cartons (58 × 28 × 34 cm, floor-loaded) | about 550 | 1,050–1,150 |
| Net weight per carton | Slices about 7 kg; dices 8–10 kg; granules 9–10 kg | Same |
| Net product | about 3.9–5.5 tonnes | about 7.4–11.5 tonnes |
The cut you choose moves the tonnage, so FruitBuys sends a container loading plan with every quote. Palletised loading is available on request.
At destination, freeze-dried avocado declares under HS 0804.40, “avocados, fresh or dried”:
- EU and UK: 0% duty with Form EUR.1 under the EU–Vietnam and UK–Vietnam free trade agreements.
- United States, UAE and other markets: your customs broker confirms the code and the duty in force on the entry date; FruitBuys declares HS 0804.40 on the invoice from the first shipment.
Every container ships with the same standard dossier: commercial invoice, packing list, bill of lading, certificate of origin (EUR.1 for the EU and UK), phytosanitary certificate and lot COA. Codes, duty and residue screening by market are in what freeze-dried avocado needs to clear US, EU, UK and UAE customs.

The 10-point check to run on any supplier
Ask every supplier on your shortlist for the same ten things. FruitBuys answers all ten before you place a deposit.
| # | Check | What a good answer looks like |
|---|---|---|
| 1 | Ingredient line | “Avocado” and nothing else, unless you ordered a colour-hold option |
| 2 | Variety and origin | Named variety and growing area on the spec and traceability record |
| 3 | Moisture and water activity | ≤5.0% and aw ≤0.30, on the lot COA |
| 4 | Fines | ≤5%, whole cubes and slices you can see in the sample |
| 5 | Lot COA | Independent ISO/IEC 17025 accredited laboratory, for every container |
| 6 | Facility | Named, certified, locked to your contract, with audit access |
| 7 | Pre-shipment sample | Drawn from the packed lot, before the container is stuffed |
| 8 | Packaging | Foil bags with desiccant, bag size matched to your batch |
| 9 | Documents | Certificate of origin (EUR.1 for EU and UK), phytosanitary certificate, COA with every shipment |
| 10 | Container plan | Carton count and net weight for your cut, before you confirm the order |
A quote that cannot answer points 1, 3 and 4 is the one to test hardest; the quote check is in how many kilos of fresh avocado make 1 kg of freeze-dried. Full specifications are on the freeze-dried avocado product page, and the wider range is in freeze-dried fruit.
Fit note. If your product needs a fresh-cut texture sold chilled, such as refrigerated guacamole, frozen or high-pressure-processed pulp still has its place; for an ambient guacamole or dip line, granules rehydrate to a soft, spreadable base in minutes.
