Freeze-Dried Avocado

Freeze-dried avocado is ripe Persea americana flesh, peeled and destoned, then frozen and dried under vacuum into light, crisp pieces with a buttery, nutty taste and a natural pale yellow-green colour. It is 100% avocado: no sugar, oil, salt, sulfites or preservatives. FruitBuys supplies it from Vietnam’s Central Highlands in bulk cartons and private-label retail packs for snack, smoothie, dip and cereal brands, importers and distributors. It belongs to our freeze-dried fruit range.

Avocado is one of the hardest fruits to move around the world: fresh fruit bruises and ripens on the way, frozen pulp needs a reefer, a data logger and freezer space, and it browns and weeps once thawed. Freeze-dried avocado ships in a standard dry container and sits on an ambient shelf, then turns back into soft, spreadable avocado with cold water in minutes. Planning a first order? Central Highlands butter avocado, with nothing added. 034 and Booth 7 are the butter-type avocados of Vietnam’s highlands: thick, dense flesh with a rich, creamy fat profile that carries straight through freeze-drying. The ingredient line on your pack reads one word, “avocado”, which suits clean-label, keto and plant-based ranges without reformulating.

Picked firm-ripe, frozen fast, packed dark. Avocado’s flavour lives in its oil. FruitBuys sources firm-ripe fruit, freezes it straight after cutting and seals it in light-proof foil with desiccant, so the pieces open crisp and still taste of fresh avocado months later. Moisture and water activity on every lot COA confirm the dryness; a peroxide test is available for retail shelf-life programmes.

Year-round supply from one crop. The highland harvest peaks May to September. Stock packed at peak ripeness covers a 12-month programme, so you lock annual volume once and call off on your own schedule. That matters more than ever: in 2026, fresh Hass prices in the US went from multi-year lows in April to supply force majeure by late May. A freeze-dried programme packed at peak season keeps your avocado volume and cost steady while the fresh market swings.

Formats and applications

FormatBest fitCarton fill
Slices 5–8 mmRetail snack pouches, salad and bowl toppers, gift packs7 kg
Dices 5×5 / 10×10 mmTrail and keto mixes, granola, cereal clusters, ready-meal kits8–10 kg
Granules 2–5 mmInstant guacamole and dip bases, smoothie and shake blends, in-house milling9–10 kg

Instant guacamole without a cold chain. Add 3–3.5 parts cold water to 1 part granules, with lime or citric acid and salt at hydration, and you get soft, bright green avocado in minutes. One kilogram of granules returns about 4–4.5 kg of ready-to-use avocado, made to order, with nothing thawed and nothing thrown away.

Smoothies and shakes: granules or freeze-dried avocado powder give a creamy body and a natural green colour without added oil or colouring.

Snack mixes, bars and cereal: crisp dices pair with nuts and seeds. Keep the finished mix at aw ≤0.30 and every piece stays crisp to the last bag. In bakery and cereal, fold the avocado in after baking or into cooled clusters; added after the heat step it keeps its fresh, buttery taste and every kilo goes into the product. Packaging

OptionDetail
Bulk1–5 kg sealed PE/aluminium-foil laminate bags, gently vacuumed with food-grade silica gel, in a 5-ply export carton
Export carton58 × 28 × 34 cm; 7–10 kg depending on format
Retail / private label30 g, 50 g, 100 g, 500 g aluminium-foil zip pouches or custom; window pouches in high-barrier laminate
StorageCool, dry and dark: ≤25 °C, RH ≤60%; ≤18 °C, RH ≤50% for stock held beyond 12 months

Built for a fat-rich fruit. The foil barrier keeps out light and oxygen, the soft vacuum holds bags flat without crushing the pieces, and silica gel holds the inside dry. The gentle vacuum holds each bag snug around the pieces, so crisp slices stay still instead of rubbing and breaking in transit, and cartons pack tight with no wasted space. OEM and ODM projects with their own pack specification are configured to your requirement. Pro tip: a cool, dark store keeps the buttery note as fresh as on loading day, and bulk bags sized to one production batch mean each bag is opened and emptied in a single run.

A container of avocado in a dry box. One kilogram takes 6.5–8 kg of whole fresh avocado, so a full 40 ft HC carries the equivalent of roughly 50–90 tonnes of fresh fruit with no reefer, no temperature logger and no freezer space at the other end. Format decides the load: dices and granules at 9–10 kg per carton put more kilograms in the same container than slices at 7 kg. The full cost logic is in how many kilos of fresh avocado make 1 kg of freeze-dried.

Quality and documents

  • Lot COA with every full container: moisture, water activity, total plate count, yeasts and moulds, Salmonella and E. coli, from an independent ISO/IEC 17025 accredited laboratory.
  • Baseline surveillance: lead, arsenic and aflatoxin monitored on a fixed schedule; reports available on request.
  • Shelf-life programmes: peroxide value and sensory tracked over storage on request, for retail packs and long holds.
  • Market panels: pesticide multi-residue to EU or US limits, nutrition panel, Listeria, Enterobacteriaceae and ethylene oxide, coordinated before stuffing.
  • Trial and LCL orders: release QC log per batch (moisture, water activity, sensory); independent lot testing available, with fees credited to your first full container.
  • Pre-shipment and retained samples: 100–200 g from the packed lot in two sealed foil pouches; a retained sample from every container lot kept for its full shelf life.
  • Certifications: HACCP, ISO 22000, BRC (qualified processing facility), US FDA Facility Registration; Halal certification available on request.
  • Standard export dossier with every shipment: commercial invoice, packing list, bill of lading, C/O Form EUR.1, phytosanitary certificate and lot COA, so the container clears on arrival without a document chase.

Import and labeling

  • Heading 0804, not 0813: avocados are named in heading 0804 “fresh or dried”, so freeze-dried avocado pieces stay there. Declaring 0813 (other dried fruit) is a common error that draws queries at entry.
  • European Union: enters under CN 0804 40 00. Every shipment carries Form EUR.1, so your entry is declared at 0% under the EU–Vietnam Free Trade Agreement on the EU TARIC line.
  • Residue screening before loading: fruit comes from managed Central Highlands growing areas, and FruitBuys screens lots against the limits in the EU pesticide residues database or US tolerances at an independent ISO/IEC 17025 laboratory before the container is stuffed.
  • United Kingdom: commodity code 0804 40 00 00 on the UK Trade Tariff, declared at 0% under UKVFTA with the same Form EUR.1.
  • United States: classified under HTSUS 0804.40.00; your customs broker confirms the duty in force on the entry date. The facility holds US FDA Facility Registration, and FruitBuys supplies Prior Notice data and the supplier file your FSVP needs. Full import guidance: freeze-dried avocado market compliance.
  • UAE / GCC: importer product registration and Arabic labeling for retail packs.

What to expect when you open a sample pouch

  1. The snap: break a slice and it cracks clean and dry, the sign of moisture held at 2–4%.
  2. The melt: put it on your tongue and the 46% fat turns it creamy within seconds, rich and buttery rather than dry.
  3. The colour: an even pale yellow-green, the same fresh-cut colour your customer will see through a window pouch.
  4. The aroma: fresh, buttery and nutty the moment the pouch opens.
  5. The numbers: read water activity on a freshly opened pouch; it sits at or below 0.30, matching the lot COA.
  6. The rehydration: stir 10 g granules into 30–35 g cold water; in a few minutes it turns soft, green and spreadable.
  7. The label: one ingredient, avocado, unless you ordered the colour-hold option.

FAQ

Does freeze-dried avocado contain anything besides avocado?

No. The standard product is 100% avocado. A colour-hold option with ascorbic and citric acid is available for applications that need extra green, and it is declared on the label.

How long does it keep?

12 months at ≤25 °C and RH ≤60%, and 18–24 months in cool storage at ≤18 °C and RH ≤50%, in the original foil bag with desiccant. A cool, dark store keeps the fat tasting fresh for the longest.

Can I make guacamole from it?

Yes. Use granules with 3–3.5 parts cold water, add lime or citric acid and salt during hydration, and it turns soft and green in minutes.

Does it work in baked goods?

Add it after baking: as a topping, in cooled clusters or in cold-mixed fillings. Avocado tastes best when it does not go through the oven.

Why 034 and Booth 7 rather than Hass?

For an ingredient, they deliver what your end product needs: thick, dense flesh that dices clean into 5 mm and 10 mm cubes, a creamy fat profile at 44–50%, and the natural yellow-green colour that shows in granola and snack mixes. They are Vietnam’s main highland crop, so FruitBuys packs them at peak season and holds one contract price for the year. The name 034 is no lab code: it is the entry number of the tree that took the top award at the 2009 Bao Lam avocado competition in Lam Dong, and it now fills most of the province’s orchards. Side-by-side with Hass, the reference most Western buyers know, see 034 and Booth 7 vs Hass.

Is it keto-friendly?

Yes. Per 100 g it carries 46 g fat, 26 g fibre and only 3 g natural sugar, about 10 g net carbs, or 1.5 g in a 15 g serving. Claim wording depends on your market and serving size.

Do I get a COA for every lot?

Every full container ships with a lot COA for moisture, water activity, total plate count, yeasts and moulds, Salmonella and E. coli. Trial and LCL orders get a release QC log per batch, with independent testing available.

Can I launch it under my own brand?

Yes, from 500 kg per SKU, with digital-printed pouches in 7–10 working days for a first run. See launching freeze-dried avocado under your own brand.
