B2B banner for freeze-dried avocado technical specification guide and RFQ checklist

What should you specify before buying freeze-dried avocado powder in bulk?

Specify five things: 100% avocado, with no carrier; 40–60 mesh, milled at low temperature; moisture ≤5.0% and water activity ≤0.30; a flow grade that matches your filling line; and a bag size that matches your batch. Those five lines decide whether your keto shake tastes of avocado, whether the powder runs through your filler and what you really pay, because the cheapest avocado powder per kilo is often the most expensive per kilo of avocado. FruitBuys mills its powder from Central Highlands 034 and Booth 7 avocado, freeze-dried whole and milled to order, so the label reads one word: avocado.

Is it whole avocado, or avocado on a carrier?

This is the first question, and it changes the price comparison completely. Two products are sold as “avocado powder”:

100% freeze-dried avocado powderAvocado spray-dried on a carrier
Ingredient lineAvocadoAvocado, maltodextrin (or another carrier)
How it is madeWhole flesh freeze-dried, then milledPurée mixed with carrier, then spray-dried; oil-rich avocado sticks to the dryer wall without one
Carrier shareNoneTypically 30–50% maltodextrin or another carrier
Fat46 g per 100 g, avocado’s ownDiluted by the carrier share
Dietary fibre26 g per 100 gDiluted by the carrier share
Sugar3 g per 100 gRises with a starch-based carrier
TextureRich, velvety, softly clumpingDry, dusty, free-flowing
Label claim“100% avocado”, one-word ingredientCarrier must be declared

For a keto or low-sugar product, the carrier is not only dilution: maltodextrin is carbohydrate, so it moves the net-carb line you are trying to keep down. Ask for three things with every quote: the ingredient statement, the fat, fibre and sugar values on a nutrition panel, and a sample rubbed between your fingers. Whole avocado powder feels rich and slightly oily, because it is half avocado fat. That is the check every buyer should run, including on FruitBuys.

Why does 100% avocado powder clump softly, and is that a problem?

It is the sign you bought avocado. Freeze-dried avocado carries 44–50% natural fat. Milled without a carrier, that oil gives the powder a texture closer to fine almond flour than to a dusty fruit powder, and in a de-aerated foil bag the particles bridge into soft clumps. A stir, a tumble of the bag or a pass through a coarse sieve brings it back to a loose, velvety powder, and in a blender or high-shear mixer the clumps disappear in seconds.

How it is milled decides what arrives. A fast mill at room temperature warms the powder by friction until the avocado oil smears on the screen and the powder turns to paste. FruitBuys mills at low temperature to 40–60 mesh and packs straight into foil with a food-grade silica gel sachet, so the powder reaches your plant as dry and as fresh-tasting as it left the freeze-dryer. Ask any powder supplier how they mill a high-fat fruit; the answer tells you what will arrive.

Standard, free-flowing or custom: which grade suits your line?

Choose by how you fill, not by habit.

  • Standard grade, 100% avocado. For batch mixing: smoothie and shake bases, dip and guacamole mixes, dressings, seasoning blends and bars. It carries the one-word label.
  • Free-flowing grade, with up to 2% silicon dioxide (E551). For auger fillers, sachets and stick packs, where the powder must run without bridging. The label adds “anti-caking agent (silicon dioxide)”, and the product can classify under HS 2106.90 instead of 1106.30.
  • Custom formulation. A powder built to your recipe, such as a guacamole seasoning base with lime and spices, developed with you as an ODM project from 500 kg per SKU.

What does a kilo of powder really cost you?

Compare on avocado, not on powder. Each kilogram of freeze-dried avocado powder carries the flesh of 6.5–8 kg of whole fresh avocado, so the dose in your recipe tells you how much real avocado each unit contains.

Your productDosePowder usedWhole fresh avocado equivalent
Keto or protein shake10 g per serving10 g65–80 g
Green dressing or sauce5%50 g per kg325–400 g per kg
Instant guacamole base1 part to 3.5 parts water220 g per kg of dip1.4–1.8 kg per kg of dip

Now run the same line for a carrier powder. At the typical 30–50% maltodextrin, the avocado equivalent falls by the same share: the 10 g shake serving holds the avocado of about 33–56 g of fruit instead of 65–80 g, and matching the taste means raising the dose. Price per kilogram of avocado delivered, not per kilogram of powder, is the number that belongs in your sourcing sheet. The fruit-to-finished ratio behind these figures is worked through in how many kilos of fresh avocado make 1 kg of freeze-dried.

Which specification lines belong in the contract?

LineSpecifyWhy it matters to you

Moisture≤5.0%, typically 2.0–4.0%You pay for avocado, not water
Water activity≤0.30Shelf-stable in dry mixes

The fruit going into the mill is the same as for the pieces: firm-ripe 034 and Booth 7 from Lam Dong and Dak Lak, frozen straight after cutting and released at aw ≤0.30. How those controls keep a fat-rich fruit fresh-tasting through storage is in how freeze-dried avocado stays crisp, green and fresh-tasting through storage.

Where does avocado powder earn its place?

ApplicationStarting doseWhat it brings
Smoothie, protein and keto shake premixes8–10 g per servingCreamy, velvety body and a natural green tint without added oil, dairy or thickener
Instant guacamole and dip bases1 part to 3–3.5 parts cold waterA smooth, spreadable avocado base in minutes; lime and salt in the water
Dressings, sauces and spreads3–6%Avocado creaminess for green goddess, avocado ranch or a plant-based spread
Seasoning blends and dry rubs10–30%A buttery base that carries lime, chilli and garlic
Cold-formed bars and bites5–10%Avocado fat and fibre in a no-bake keto bar

Start your bench trial at the middle of the range and adjust by taste. Avocado belongs in cold, dry and fat-based products: add it after any heat step, never through the oven. The per-serving nutrition, with about 1.5 g net carbs per 15 g, is in what freeze-dried avocado nutrition facts give a keto or clean-label product. For crunchy inclusions in trail mix, granola and snack pouches, the pieces do the job better; doses and cuts are in how to use freeze-dried avocado.

When is powder the wrong choice?

Powder is the right format when avocado must disappear into a base. Choose slices or dices when shoppers should see and bite the avocado: in trail mix, granola, chocolate bark or a snack pouch. If your guacamole must show chunks, granules 2–5 mm give the bite that powder cannot. And if your filling line runs on augers or stick-pack machines, specify the free-flowing grade from the start rather than fighting clumps on the line.

How do powder orders ship?

ItemStandard
Carton58 × 28 × 34 cm, 15–20 kg (3–4 × 5 kg foil bags)
20 ft containerAbout 550 cartons, 8.2–11 t net
40 ft HC1,050–1,100 cartons, about 16–22 t net, or mixed with freeze-dried avocado pieces
Samples3–5 working days by express courier
Production20–30 days for a 20 ft container, after deposit
Private labelStick packs, sachets, jars and pouches, from 500 kg per SKU

Powder puts 8.2–11 t in a 20 ft container, about twice the net weight of pieces, so freight per kilogram of avocado falls sharply. A full 40 ft HC of powder carries about 16–22 t for large shake and seasoning programmes. If you buy both formats, load them together: heavier powder cartons on the lower tiers and lighter piece cartons above, in a 20 ft or 40 ft HC. One customs entry brings in powder for your shake line and dices for your snack range. HS codes and the document set are on the freeze-dried avocado powder product page.

Request a sample and run the finger test

Ask for a sample of the standard grade, rub a pinch between your fingers, blend 10 g into a shake at your target recipe and stir a spoonful into cold water with lime and salt. FruitBuys dispatches samples within 3–5 working days with the specification and the release QC log for the lot.

FAQ

What is the difference between freeze-dried avocado powder and spray-dried avocado powder?

Freeze-dried powder is the whole avocado flesh milled fine, with 46 g of fat and 26 g of fibre per 100 g. Spray-dried powder is avocado purée dried on a carrier, typically 30–50% maltodextrin, so it carries far less avocado per kilo.

Why does 100% avocado powder clump?

It carries 44–50% natural avocado fat, which bridges particles into soft clumps in the bag. A stir, a tumble or a sieve loosens them; for automatic filling, choose the free-flowing grade.

What mesh is it?

40–60 mesh, milled at low temperature so the oil does not smear.

Is it keto-friendly?

Yes. The standard grade carries 3 g sugar per 100 g and about 1.5 g net carbs per 15 g, with avocado fat as the main energy source.

Can I make guacamole from it?

Yes. Mix 1 part powder with 3–3.5 parts cold water, with lime and salt in the water first, for a smooth avocado base in minutes. For a chunky guacamole, use granules.

Is the powder made from the same avocado as the pieces?

Yes. FruitBuys mills it to order from the same Central Highlands freeze-dried lots.

Can I label it “100% avocado”?

Yes, with the standard grade. The free-flowing grade declares silicon dioxide as well.
