What Should You Specify Before Buying Freeze-Dried Pineapple Powder in Bulk?
Freeze-dried pineapple powder is pineapple flesh (Ananas comosus) that has been freeze-dried and then milled. Specify four things before you ask for a price: whether the powder is 100% fruit or contains a carrier, the moisture and water activity at release, the particle size, and how the bag will be protected from moisture. Two powders sold under the same name can differ on all four, so the cheaper quote is often a different product rather than a better deal.
This guide covers what to settle before your first RFQ. It links to the detailed guides for each question.
How is pineapple powder different from freeze-dried pineapple pieces?
Pineapple powder is not just ground pieces. Milling turns a crisp piece into millions of particles with a far larger surface area. As a result, the powder picks up moisture from the air faster, it can form lumps in the bag, and in a drink it has to disperse rather than rehydrate.
Three consequences for a buyer:
- Moisture risk is higher. About 70% of pineapple dry matter is sugar (calculated from USDA fresh-fruit data). Sugar-rich powder that picks up moisture first gets sticky, then forms hard lumps that block dosing equipment.
- The enzyme is still there. Freeze-drying uses no heat step that would switch off bromelain, pineapple’s natural protein-digesting enzyme. In unheated dairy or gelatin products this can thin the texture. Run a pilot in your own recipe before scale-up.
- Results from pieces do not transfer. A water activity value that keeps chunks crisp does not prove a powder will flow. Specify and test the powder on its own terms.
If you are buying pieces, the freeze-dried pineapple buyer’s guide is the right starting point.
100% pineapple or with a carrier: which are you being quoted?
This is the first question to ask, because it decides the label, the customs code and part of the price.
| Type | What it contains | Label | What to watch |
|---|---|---|---|
| 100% fruit powder | Pineapple only | “Pineapple” as the single ingredient | Most moisture-sensitive; packaging matters most |
| Powder with carrier | Pineapple plus maltodextrin or another carrier | Every ingredient listed, in descending order of weight | Lower fruit content per kilogram; fruit percentage must be stated in the specification |
| Powder with anti-caking agent | Pineapple plus a flow aid such as silicon dioxide | Additive declared by name or E-number | Not compatible with a “100% pineapple” claim |
Under EU Regulation (EU) No 1169/2011, every ingredient and additive goes on the ingredient list. A supplier that adds a carrier or flow aid without telling you leaves your label wrong. If the quote does not say “100% pineapple”, ask for the full composition in writing, and ask for the fruit percentage if any carrier is used. FruitBuys supplies 100% pineapple powder by default, with a free-flow grade containing silicon dioxide at ≤1% on request.
Which numbers belong in a powder specification?
The table lists what a bulk contract should fix for each powder SKU. Limits differ between a 100% fruit powder and a carrier blend, so agree the values per SKU against a signed reference sample.
| Clause | What to require | Why it matters to you |
|---|---|---|
| Composition | 100% pineapple, or carrier named with fruit percentage | Decides your label and claims |
| Moisture and water activity | Both measured on the same sample after milling and before packing; FruitBuys releases at moisture ≤4.0% and water activity ≤0.30 at 25 °C | Predicts caking and shelf life; moisture alone cannot support a claim against a caked lot |
| Particle size | 80 mesh, ≥95% passing as FruitBuys standard; 100–120 mesh for instant drinks, 60–80 mesh for bakery | Coarser powder disperses slowly in drinks; finer powder dusts more and cakes sooner |
| Flow and caking | Agreed test and pass level after storage | Lumps stop dosing lines |
| Colour and aroma | Against the signed reference sample | Consistency for your finished product |
| Microbiology | Salmonella not detected in 25 g; E. coli <10 cfu/g; total plate count ≤10,000 cfu/g; yeasts and moulds ≤100 cfu/g; Listeria and Enterobacteriaceae as extended tests | Powder goes into foods that are often not cooked |
| Pesticides | Destination limits, with ethephon reported by name | Ethephon is the residue EU borders check on pineapple |
| Fresh fruit intake | 13–15° Brix for powder, against 15–17° for retail pieces | Powder goes into drinks, yogurt bases and seasonings where a sharper sweet-tart profile works, and the wider intake band keeps fruit cost down |
Which mesh should you order?
| Application | Mesh |
|---|---|
| Instant drinks, smoothie and juice mixes | 100–120 mesh |
| Yogurt, ice cream, dairy desserts | 80 mesh |
| Bakery fillings, icings, premixes | 60–80 mesh |
Order the coarsest powder your process accepts, because finer powder cakes sooner. For a first order, start at 80 mesh, and ask for the sieve result of the lot, not only the mesh named on the bag.
Which test results come with the powder?
Every full container ships with a lot-specific certificate from an ISO/IEC 17025 laboratory covering moisture, water activity, particle size, total plate count, yeasts and moulds, E. coli and Salmonella. Trial and LCL orders ship with the factory release QC report and the latest baseline surveillance report; third-party testing of a trial lot is charged at net laboratory cost and credited back in full on the first full container. Extended or market tests, such as Listeria or ethephon for the EU, are arranged before stuffing.

Why does pineapple powder cake, and how do you prevent it?
Caking starts when the powder picks up water from the air, during milling, filling, shipping or after the bag is opened. It is fast: in humid factory air around 70% RH, exposed pineapple powder starts to crust within 30–60 minutes, which is the scene of a weighing station where the first scoop flows and the last one comes out in lumps. The surface of each particle softens, neighbouring particles stick together, and when they dry again they set into hard lumps. Once that happens the powder cannot be fully restored.
Prevention works at three points:
- Release. Low water activity at packing, measured on the lot, not on the sample.
- Pack. A high-barrier aluminium-foil bag, gently de-aerated and sealed with a food-grade desiccant sachet inside; no nitrogen, because an inflated bag rubs the powder, raises dust and wastes carton space. FruitBuys packs powder in 5 kg bags, four to a 58 × 28 × 34 cm carton (20 kg net), so opening one bag exposes only 5 kg to room air. A 20 ft container carries 550 cartons, or 11,000 kg; finer grades are confirmed by a trial pack.
- Use. A rule for opened bags: open them only in dry conditions, reseal straight away with fresh desiccant, and use them within 7 days.
The packaging logic for freeze-dried pineapple, including container loading against condensation, is set out in how long does freeze-dried pineapple really last? Powder needs the same barrier, with less tolerance for mistakes.
Where is freeze-dried pineapple powder used?
Powder suits recipes where the fruit has to dissolve or disperse:
- smoothie and drink mixes
- flavoured yogurt bases and desserts, once a pilot has checked the bromelain effect
- bakery fillings, icings and coatings
- seasoning and snack coatings
- confectionery centres

Which HS code and labels apply to pineapple powder?
Do not copy the code used for pieces. Dried pineapple pieces fall under 0804.30. Powder of Chapter 8 fruit points to heading 1106.30, but a carrier or other ingredient can move the product to a different heading. For a binding answer, an EU Binding Tariff Information decision settles the code.
Nutrition values must come from analysis of your own SKU. A powder with a carrier will not match the values for pure pineapple. When is freeze-dried pineapple powder the wrong choice?
- Your process is wet and hot. If the powder is heated for a long time in water, a cheaper drum-dried or spray-dried powder may give a similar flavour result. Freeze-drying earns its cost when colour and fresh aroma matter.
- You need visible fruit. Powder disappears in the product. Use dice.
- Your plant cannot keep powder dry. Without dry storage and a rule for opened bags, caking losses can cancel the quality advantage.
- You compare quotes by price per kilogram alone. A carrier blend and a 100% fruit powder are different products. Compare the cost per kilogram of fruit solids.
Frequently asked questions
Is freeze-dried pineapple powder 100% fruit?
It can be, but not always. Some powders contain maltodextrin or an anti-caking agent. Ask for the full composition in writing. FruitBuys powder is 100% pineapple by default.
Which mesh is standard?
80 mesh, with at least 95% passing the sieve. Choose 100–120 mesh for instant drinks and 60–80 mesh for bakery.
Does pineapple powder need refrigeration?
No, not in a sealed high-barrier pack. It needs dry storage, and once a bag is opened, protection from humid air.
Can pineapple powder be used in yogurt?
Yes, after a pilot. Bromelain is likely still active after freeze-drying and can affect protein-based products during their shelf life.
What HS code applies to pineapple powder?
Usually heading 1106.30 for pure fruit powder. The code depends on composition; a Binding Tariff Information decision settles it.
Where can I see the full specification and packing options?
On the freeze-dried pineapple powder product page.
