What should you specify before buying freeze-dried jackfruit powder in bulk?
Lock four things before you ask for a price: how much of the powder is actually jackfruit, the moisture and water activity at release, the mesh size, and how the bag is protected from air. Two powders sold as “jackfruit powder” can differ on all four. The cheaper quote is usually a different product, not a better deal.
Jackfruit makes these choices sharper than most fruits. About 70% of its dry matter is natural sugar, so the powder pulls moisture from humid air faster than almost any other fruit powder you will buy. A specification that works for mango or banana powder can fail with jackfruit.
Is jackfruit powder just ground freeze-dried jackfruit pieces?
It comes from the same fruit, but it has its own raw-material stream and its own process risks.
- Raw material. Whole intact bulbs carry the highest cost of all formats, because of the trimming and sorting they need, so they go to snack and retail packs. Powder is milled from clean sorted pieces and broken bulb fragments: the same ripe, deseeded pulp at 18–24 °Brix, free of core, rind, rags and seeds, held to the same microbiological limits. You get the same fruit solids and flavour without paying for the shape of a whole bulb.
- Milling heat. With about 70% sugar in the dry matter, friction in the mill can soften the sugars and glaze the screen. Feed rate is controlled to keep the milling chamber below 35–40 °C, and milling runs in a room held at 20–24 °C and RH ≤35–40%.
- Surface area. Milling turns one crisp piece into millions of particles. An open bag of powder in a humid plant starts to crust within minutes, where a bag of bulbs would tolerate the same air far longer.
- Visibility. Powder disappears into the product. If the consumer has to see jackfruit, use bulbs or dice from the freeze-dried jackfruit buyer’s guide instead.
100% jackfruit or carrier powder: how do you compare quotes?
Ask for the full composition in writing before you look at price. This one line decides your label, your HS code and how much fruit you actually receive.
| Type | Contains | Label | HS code |
|---|---|---|---|
| 100% freeze-dried powder | Jackfruit only | “Jackfruit” as the single ingredient | 1106.30 |
| Spray-dried with carrier | Jackfruit plus maltodextrin or gum | Every ingredient, in descending order | 2106.90 |
| With anti-caking agent | Jackfruit plus a flow aid | Additive declared | 2106.90 |
Compare quotes on cost per kilogram of fruit solids, not per kilogram of powder:
Cost per kg of fruit solids = price per kg ÷ (fruit share × (1 − moisture))
Example: a 100% powder at 4% moisture delivers 0.96 kg of jackfruit solids per kilogram. A carrier powder that is 50% fruit at the same moisture delivers 0.48 kg. To put the same jackfruit dose into your product, you need twice as much of the carrier powder. A quote that looks 40% cheaper per kilogram is then about 20% more expensive per kilogram of fruit.
How to verify a “100%” claim. A carrier can be blended into a powder that is still invoiced as “100% jackfruit”. Protect yourself in four steps:
- Signed declaration: “100% Artocarpus heterophyllus, carrier-free, no starch or maltodextrin added, classified under HS 1106.30.”
- Dispersion check (5 minutes): stir a 10% solution in warm water. Pure jackfruit powder leaves fine natural fibre in suspension, a deep golden colour and a strong ripe-fruit aroma. A carrier blend looks paler and clearer, and tastes thinner.
- Total ash: jackfruit solids carry about 3.0–4.5% ash from their natural minerals; maltodextrin carries almost none (below 0.5%). A low ash result in your QC lab is a fast, cheap flag for dilution.
- HPLC sugar profile if you need proof: the fruit’s fructose, glucose and sucrose pattern, with no long glucose polymers. An iodine drop test is not reliable here, because most maltodextrins do not turn blue the way starch does.
FruitBuys supplies 100% jackfruit with no carrier. If your blending line cannot hold RH ≤40%, a flow aid can be added at your request: food-grade silicon dioxide (E551) at 0.5–1.0% or tricalcium phosphate, or rice hull concentrate as a clean-label option. Any flow aid is declared on the label and moves the product from HS 1106.30 to 2106.90.
Which numbers belong in the purchase specification?
| Clause | FruitBuys standard | What it protects |
|---|---|---|
| Composition | 100% jackfruit, ripe and deseeded | Your label and “no added sugar” claim |
| Moisture | ≤4.0% | Flowability and value per kilogram |
| Water activity | ≤0.30 contract limit, released at ≤0.25 | Caking and shelf life; measured after milling, before packing |
| Particle size | 60–80 mesh standard; 80–100 mesh for beverages | Dispersion in drinks, dust in mixing |
| Microbiology | TPC ≤10⁴, yeasts and moulds ≤10², E. coli <10 CFU/g, Salmonella not detected in 25 g | Powder often goes into products that are not cooked |
| Foreign matter | In-line rare-earth magnets (≥10,000 gauss) and metal detection (Fe, non-Fe, stainless steel) | Removes wear debris from milling screens before packing |
| Colour and aroma | Matched to a signed reference sample | Batch-to-batch consistency in your product |
Choosing a mesh and a starting dose for your pilot:
| Application | Mesh | Starting inclusion |
|---|---|---|
| Instant drinks, RTD and smoothie mixes | 80–100 mesh: fast dispersion, no grit | 3–5% |
| Yogurt, ice cream, dairy desserts | 80 mesh: blends smoothly without clumps | 4–8% |
| Bakery fillings, creams, premixes | 60–80 mesh: even blending with less dust | 5–10% |
| Snack seasonings and dusting | 40–60 mesh: coarser granules adhere better to oiled surfaces | 2–4% |
Inclusion rates are starting points for a pilot batch; your base, sweetness target and colour decide the final dose.
Order the coarsest grade your process accepts. Do not go finer than 100–120 mesh with jackfruit: the extra surface area and static cling make the powder pull moisture and set into a brick within minutes of opening. For a first order, start at 80 mesh and ask for the sieve result of the lot, not only the mesh printed on the bag.
How do you stop jackfruit powder from caking?
Caking starts when particles pick up water, soften at the surface and stick. When they dry again they set into lumps that block dosing lines and cannot be fully broken back to powder. Control sits at three points.
- Release. Water activity at or below 0.25 at packing, measured on the lot.
- Pack. Bagging in a room held at 20–24 °C and RH ≤35–40%, so the powder does not take up moisture at the filling hopper. 4 × 5 kg PET/AL/LLDPE barrier bags, gently de-aerated (never hard-vacuumed) and heat-sealed with desiccant, no nitrogen, in a 58 × 28 × 34 cm master carton of 20 kg net. Your line opens one 5 kg bag per batch without exposing the other 15 kg. Powder is not vacuum-packed hard, because a tight vacuum presses it into a block. Smaller bags limit how much powder each opening exposes.
- Use. Open bags only in a dry room, reseal immediately and treat each opened bag as a single batch.
On the route, the same container risks apply as for pieces: condensation at sea and heat at Gulf ports in summer. The countermeasures (desiccant poles, top sheet, a thermal reflective liner for Gulf summer arrivals in a standard dry container) are set out in how bulk freeze-dried jackfruit is packed and loaded.
How much powder fits in a container, and what does that do to freight?
Freeze-dried pieces fill a container’s volume long before its weight limit. Powder does the opposite: it reaches the weight limit first.
| Equipment | Load | What it means |
|---|---|---|
| 20 ft, floor-loaded | About 550 cartons, 11,000 kg net | 2 to almost 3 times the 3,850–5,500 kg of pieces in the same box |
| 40 ft HC, floor-loaded | About 1,000–1,050 cartons, 20,000–21,000 kg net | Capped below the container’s volume by road weight limits in the destination; in the US, cargo above about 19,000–20,000 kg needs an overweight permit |
| 20 ft, palletized | 10 pallets × 30–36 cartons, 6,000–7,200 kg net | Pallet height is limited by the container door, so palletizing costs weight capacity |
| 40 ft HC, palletized | 20–21 pallets × 36 cartons (6 per layer, 6 layers), 14,400–15,120 kg net | The configuration automated warehouses and large manufacturers usually require |
What this means for you: freight per kilogram of powder in a 20 ft container is 50–65% lower than for pieces. Plan a 40 ft load to your inland trucking route, not to the container’s cubic capacity.
Which documents and tests come with each order?
- Full container: a lot COA for moisture, water activity, total plate count, yeasts and moulds, E. coli and Salmonella, with particle size checked at release.
- Baseline surveillance: periodic third-party testing for lead, arsenic and aflatoxin. Current reports are available on request.
- Trial and LCL orders: a free in-house release QC log plus the baseline reports. Third-party testing on your batch runs at net laboratory cost and is credited back in full against your first full container.
- Pre-shipment sample: 100–200 g, split into two sealed foil pouches with desiccant (one for sensory checks, one kept sealed for your laboratory), drawn from your packed lot and couriered within 24–48 hours of packing.
- Facility: one qualified facility, operating under HACCP, ISO 22000 and BRC with US FDA food facility registration (Halal certification available on request), locked to your contract under written change-control.
How to set release limits and read a COA is covered in freeze-dried jackfruit moisture, water activity and COA. The limits are the same logic; only the physical clauses change for powder.
Which HS code and label rules apply?
Do not copy the code used for pieces. Dried jackfruit pieces fall under 0813.40. A 100% fruit powder of Chapter 8 fruit falls under 1106.30. Add a carrier or anti-caking agent and the product becomes a food preparation under 2106.90, with a different duty. Decide the composition and the code together, before you print packaging. For the EU and UK, a C/O Form EUR.1 carries the EVFTA or UKVFTA preference.
A 100% fruit powder is a processed food, so it clears faster and with fewer questions than fresh jackfruit. It travels on its safety file: the lot release COA, the facility’s FDA registration for the US, and an export health certificate where the destination asks for one, such as the UAE. FruitBuys also includes a phytosanitary certificate with every shipment as part of its standard export dossier, so your broker never has to explain the product at the port.
The nutrition panel must come from analysis of your own SKU; a carrier powder will not match the values of pure jackfruit. Sugars are declared even when no sugar is added. Classification and import documents by market are covered in freeze-dried jackfruit HS code and import documents.
When is freeze-dried jackfruit powder the wrong choice?
- You need visible fruit. Use bulbs or dice; see freeze-dried jackfruit formats for food manufacturing.
- Your process cooks the powder in water for a long time. Heat flattens the fresh aroma that freeze-drying preserves. Dose the powder after cooking, or use a lower inclusion of 100% powder: it carries more fruit per gram than a carrier powder.
- Your plant cannot keep powder dry. Without a dry room and an opened-bag rule, caking losses can cancel the quality advantage.
- You need a meat substitute. That is unripe young jackfruit, a different product; FruitBuys supplies young jackfruit for savoury and plant-based lines as a custom project order.

FAQ
Is FruitBuys jackfruit powder 100% fruit?
Yes. No maltodextrin, no added sugar and no anti-caking agent, unless your formula requires one.
What mesh is standard?
60–80 mesh. Choose 80–100 mesh for instant drinks, 80 mesh for dairy and 40–60 mesh for seasonings.
Why does jackfruit powder cake faster than other fruit powders?
About 70% of its dry matter is natural sugar, which pulls moisture from humid air. Low release water activity, barrier bags and a dry handling room prevent it.
What HS code applies?
1106.30 for 100% powder; 2106.90 if a carrier or anti-caking agent is added.
How much powder fits in a container?
About 11,000 kg in a 20 ft container and 20,000–21,000 kg in a 40 ft HC, where road weight limits set the cap.
Does the powder need refrigeration?
No. It needs a sealed barrier pack and dry storage below 25 °C and 60% relative humidity.
