Where do Vietnam’s lotus seeds come from, and can one harvest cover your year?

Vietnam’s lotus seeds come from Dong Thap, the Mekong Delta province built around lotus, and yes: one main harvest covers a full year. Kernels are bought in the main harvest from July to September, when they are fully mature, and freeze-dried while fresh. A freeze-dried kernel keeps 12 months at ≤25 °C, so a year’s programme is contracted in season and shipped on your call-off schedule, including the run-up to Mid-Autumn.

Freeze-dried lotus seeds are the shelled, cored kernels of Nelumbo nucifera, steam-blanched and freeze-dried to ≤5% moisture and water activity ≤0.30. They are crisp and ready to eat from the bag, and rehydrate in 10–15 minutes in warm water instead of an overnight soak. They are not makhana (fox nut, Euryale ferox), which comes from a different water plant. This guide covers where the seeds grow, how the season works for a buyer, what a kernel has to pass at intake and how a lot is traced to your container.

Why do Vietnam’s lotus seeds come from Dong Thap?

Because Dong Thap is where Vietnam grows lotus at scale, and is known for it. The province has about 1,800 ha under lotus (2026), grown on the low, flooded land of the Mekong Delta for seeds, flowers, roots and leaves, and sold in some 60 certified local lotus products. Our kernels come from Dong Thap, Vietnam’s lotus province, whose fresh lotus seeds carry a national geographical indication (No. 00145).

For a buyer, that reputation is practical. A named origin with a protected regional name is an origin your marketing team can put on a pack and your QA team can audit. All FruitBuys lotus seeds are sourced from Dong Thap, so every lot carries the same answer to “where did this come from?”

How does the July–September harvest cover a whole year?

By contracting the year’s volume in season and letting the drying hold it. Lotus seeds are not picked evenly across the year. The main harvest runs from July to September, when kernels are fully mature, dense and well filled. That is when the quality is highest and the conversion is most efficient, at the 5.5 kg end of the 5.5–6.5 kg range of fresh shelled kernel per kilo.

Freeze-drying then does what cold storage does for fresh produce, without the cold. At Aw ≤0.30 in sealed foil, kernels keep 12 months at ≤25 °C and 18–24 months in cool storage at ≤18 °C. For your programme that means:

  • One contract, a year of supply. The year’s volume is fixed in the main harvest and shipped in scheduled call-offs.
  • Mid-Autumn covered. For Mid-Autumn 2027 (15 September), confirm orders by May–June for July arrival, so paste is milled in August. The paste-line calendar is in freeze-dried lotus seeds for mooncake paste.
  • Capacity sized for it. FruitBuys runs 100 MT a year of freeze-dried lotus seeds, drawing from contracted growing areas in Dong Thap.

How are lotus seeds bought at the pond?

In the green husk, by weight, at Dong Thap buying points. About 10–12 kg of fresh seeds in the husk make 1 kg of freeze-dried kernels; once shelled, that is 5.5–6.5 kg of fresh kernel. The husk and the skin under it take roughly 45% of the in-husk weight.

Buying at that stage, rather than buying shelled or part-processed kernels from a trader, is what lets the supply chain control maturity, freshness and the time from pond to freezer. Where each kilo goes, and why some quotes show 3–4 kg, is set out in how many kilograms of fresh lotus seeds make 1 kg freeze-dried.

What does a kernel have to pass at intake?

Four checks, and each one shows up later in your bag.

Check at intakeWhat passesWhat it protects in the finished kernel
MaturityFully mature seeds from the main harvestDense, well-filled kernels with a crisp bite and an even ivory colour
FillEmpty and underfilled seeds sorted out at shellingNo light, hollow kernels in your whole-kernel grade
SoundnessFree of insect damage, rot and dark patchesClean kernels with no off-notes
CoreGreen plumule pushed out of every kernel before blanching≥99% coreless: no bitter batch in your paste or snack

From intake the kernels are cored, steam-blanched for 5–10 minutes, frozen at −30 °C and freeze-dried; each step and what it does to the kernel is in how lotus seeds are freeze-dried.

Why do programmes contract in season?

Because the best kernels arrive together, and the crop has its pressures. Reports from the province in 2026 describe disease pressure in lotus ponds, including runner disease, root rot and the gradual degeneration of older planting stock, alongside a tissue-culture lotus pilot on 5–6 ha to renew it. The province is also supporting growing-area codes and traceability for export.

None of that threatens a contracted programme, but it does reward planning. A buyer who fixes volume in the July–September harvest secures mature kernels from the strongest part of the season; a buyer who tries to source in the gaps between harvests competes for a thinner supply. Contract in season, ship on call-off.

How is a lot traced from Dong Thap to your container?

Through one region, one facility and one sealed reference sample.

  1. One source region. Every kernel comes from Dong Thap, sourced and coordinated by FruitBuys.
  2. One locked partner facility per contract. Kernels are freeze-dried at a qualified partner facility in the Central Highlands that holds HACCP, ISO 22000, US FDA Facility Registration and BRC (qualified processing facility). Any change of facility needs prior written notice and re-approval of your pre-shipment sample, and you have audit access.
  3. One lot, one COA. Every lot ships with a COA from an independent ISO/IEC 17025 accredited laboratory.
  4. One sealed reference. A pre-shipment sample from the packed lot reaches you before the container sails, and a retained sample from every container lot is kept for its full shelf life, up to 24 months.

If a question comes up at your end months later, it is answered against the same lot at ours.

What if your programme needs organic or single-farm lotus seeds?

If your pack must carry an organic logo, it needs a certified-organic supply chain, and FruitBuys does not hold organic certification for lotus seeds. If the concern is what is on or in the kernel, FruitBuys arranges a multi-residue pesticide screen, together with heavy-metal and aflatoxin panels, on your lot at an ISO/IEC 17025 accredited laboratory before the container is stuffed. These panels are matched to your market and either paid by the buyer or shared according to volume.

For most food manufacturers and private-label buyers, a clean result on the actual lot answers the retailer’s question more directly than a farm certificate would.
