Freeze-Dried Pineapple

FruitBuys supplies 100% freeze-dried pineapple (Ananas comosus) from Vietnam as chunks, dice and slices, in bulk for food manufacturers and in retail packs for private-label brands. Every lot ships against two release values measured on the same sample, 3–5% moisture and water activity ≤0.30, and every full container ships with a lot-specific COA (ethephon included for EU-bound containers). Queen pineapple from the Mekong Delta gives the pieces a deep natural gold, a strong aroma and a sweet-tart bite with no sugar added.

We supply through an integrated model: FruitBuys owns the product file (specification, signed golden sample, release rules, lot certificates and export documents) and audited partner factories produce to it. You approve one defined product, not a sample and a promise.

Values are release targets. Periodic third-party baseline surveillance shows the process capability behind them: water activity 0.246 at 25 °C, Salmonella not detected in 25 g, E. coli below 10 CFU/g, and aflatoxins, lead and arsenic below the limit of quantification. Every full container is released against its own lot COA from an ISO/IEC 17025 laboratory; trial and LCL orders ship with the factory release QC report and the latest baseline report, with third-party testing of a trial lot available at net laboratory cost and credited back in full on the first full container.

Quality and documents

  • Lot COA per full container from an ISO/IEC 17025 laboratory, with lot code, method, limit and result for the core release set: moisture, water activity, total plate count, yeasts and moulds, E. coli and Salmonella
  • Baseline surveillance reports from periodic third-party testing: lead, arsenic and aflatoxin; reports available on request
  • Trial and LCL orders: factory in-house release QC report plus the latest baseline report; third-party testing of the trial lot at net laboratory cost, credited back in full against the first full-container order
  • Extended and market tests (Listeria, Enterobacteriaceae, cadmium, pesticide multi-residue, ethephon for EU-bound shipments): coordinated with ISO/IEC 17025 laboratories in Vietnam before stuffing, 3–5 working days
  • Production records on request: fruit intake, drying, sorting, packing and fruit-to-product conversion
  • Pre-shipment sample: 100–200 g in two sealed foil pouches with desiccant, drawn from the packed lot and sent by courier within 24–48 hours
  • Signed golden sample and a retained sample from every container lot, held for the full shelf life (up to 24 months)
  • Facility certification: HACCP, ISO 22000, BRC (qualified processing facility), HALAL and US FDA Facility Registration at partner facilities; certificate numbers, scope and expiry provided with the quotation
  • Market documents: EUR.1 certificate of origin for EVFTA, nutrition and label inputs for US, EU and GCC formats; a phytosanitary certificate is issued with every shipment as part of FruitBuys’ standard export dossier

Import and labeling

  • HS direction: 0804.30 (pineapples, fresh or dried) for 100% pineapple; 2008.20 if sugar or other ingredients are added. Not 0813, which excludes pineapple. For US entries, the national line sits under 0804.30 in the US tariff schedule.
  • EU: 0% duty under EVFTA with an EUR.1 certificate, instead of the 5.8% third-country rate on CN 0804 30 00, as shown in the EU tariff database (TARIC). The EU ethephon limit for pineapple is 1.5 mg/kg on whole fresh pineapple from 19 August 2026.
  • US: partner facilities hold US FDA Facility Registration for your FSVP file; Prior Notice before arrival.
  • Nutrition labeling: US and EU panels for 100% freeze-dried pineapple are in the Nutrition section above; final label values come from the lot nutrition panel FruitBuys runs on your commercial lot, never from fresh-fruit tables.

Seasons and supply

Queen pineapple from the irrigated Mekong Delta (Tiền Giang, Long An, Kiên Giang, Hậu Giang) is harvested all year, with the nearby Central Highlands as supplementary supply. Every farm sits within a few hours’ drive of FruitBuys in Ho Chi Minh City, so ripeness and spray records are checked in the field, and fruit reaches the freezer within 24–48 hours of harvest. A buffer of around 10 tonnes of frozen pineapple at −18 °C keeps dryers running between harvest peaks. Allocation by quarter is agreed per contract. Why Vietnam, and which variety to choose, is covered in should you source freeze-dried pineapple from Vietnam?

Verify the sample

  1. On arrival, check water activity (≤0.30) and moisture (3–5%) against the COA.
  2. Compare colour and cut size with the signed golden sample.
  3. Check every pouch seal and confirm the desiccant sachet is present and dry.
  4. For dairy or gelatin products, run a pilot for the bromelain effect through your full shelf life.

FAQ

What moisture and water activity do you release at?

3–5% moisture and water activity ≤0.30, both measured on the same sample. A lot that fails either is not shipped.

Is it 100% pineapple?

Yes: no added sugar, no sulphite and no anti-caking agent. The US label shows 0 g added sugars; EU labels add “contains naturally occurring sugars”.

How much fresh pineapple goes into 1 kg?

About 18–22 kg of whole fruit, or 9–11 kg of trimmed flesh, depending on fruit sweetness and season.

How long does it keep?

12 months at ≤25 °C, RH ≤60% in the original unopened foil bag with desiccant; 18–24 months in cool storage at ≤18 °C, RH ≤50%.

Does it need refrigerated shipping?

No. In sealed foil packs it ships in a standard dry container, loaded against condensation.

Is it ready to eat?

Yes, for lots released for ready-to-eat use. Because freeze-drying removes water rather than killing bacteria, those lots are released only with three pieces of evidence: the partner factory’s hazard analysis, its washing and post-drying monitoring records, and lot results showing Salmonella not detected in 25 g, with Listeria added as an extended test where your market or customer requires it.

Do I get a COA for my lot?

Yes, for full-container orders. Trial and LCL orders ship with the factory release QC report and the latest baseline surveillance report.

Can you pack under our brand?

Yes, OEM/ODM from 500 kg per SKU. FruitBuys fixes the product specification first, then the pouch and label.
