Where does Vietnam’s lotus root grow, and can it supply your line all year?

Vietnam’s lotus root comes from Dong Thap, the Mekong Delta province built around lotus, and it comes all year. Growers stagger their planting, roots are lifted 5–6 months after each planting, and fresh roots reach the line every month. For a buyer, that means a freeze-dried lotus root programme runs on scheduled call-offs through the year, without a single harvest window to bet the season on.

Freeze-dried lotus root is the peeled, sliced rhizome of Nelumbo nucifera, blanched and freeze-dried to 3–5% moisture and water activity below 0.30; it keeps the ivory colour and 7–9-hole wheel pattern of fresh lotus root, is crisp from the bag and rehydrates in hot water. This guide covers where the root grows, how the growing cycle keeps supply flowing, what a root has to pass before it is sliced, and how a lot is traced from source to container.

Why does Vietnam’s lotus root come from Dong Thap?

Because Dong Thap is where Vietnam grows lotus at scale. The province has about 1,800 ha under lotus (2026), across the low, flooded land of the Mekong Delta, and lotus is its signature crop: grown for seeds, flowers, shoots and roots, sold in some 60 certified local lotus products, and celebrated with a provincial lotus festival, held for the third time in June 2026.

Lotus root grows in pond mud, under standing water. The Delta’s flat, flooded fields and warm year-round climate suit it in a way few regions do. Dong Thap’s roots are crisp and juicy, the type eaten raw in southern Vietnamese salads and cooked in soups, and that crisp flesh is what slices clean and dries to an airy, crunchy freeze-dried slice.

All FruitBuys lotus root is sourced from Dong Thap. For a buyer, a single origin means one growing region to audit, one set of conditions behind every lot, and one answer when your QA team asks where the root came from.

How does staggered planting keep lotus root available all year?

Lotus root is not a one-harvest crop. A planting is ready to lift 5–6 months later, once the leaves above the water turn brown and the roots below have filled out. Growers in Dong Thap plant their ponds at different times of year, so somewhere in the province a crop is always coming ready.

That has three consequences for your programme:

  • Call-offs instead of a season. Fresh roots reach the line every month, so a year’s volume can be split into scheduled shipments rather than bought in one window and stored.
  • Fresh roots, not stored ones. Each lot is made from roots lifted shortly before processing, which matters for a root that browns within minutes of peeling.
  • Volume that fits the region. FruitBuys’ 100 MT a year of freeze-dried lotus root draws roughly 700–800 t of whole roots, a modest share of a province with 1,800 ha under lotus.

The weather still shows up in the root. In the rainy months, roots come out of the ponds with more mud, and washing and channel inspection carry more of the work. Mature roots carry a little more dry matter than young ones, so the fresh-to-dry ratio moves within its known band of 5.5–7.0 kg of peeled root per kilo; the full mass balance is in how many kilograms of lotus root make 1 kg freeze-dried.

What does a root have to pass before it is sliced?

A lotus root is judged on four things at intake, and each one shows up later in your bag.

Check at intakeWhat passesWhat it protects in the finished slice
Section sizeLong, straight internode sections, wide enough for Ø 40–60 mm wheelsRound, whole wheels in the A-grade; shorter sections go to half slices, dice and granules
Joints and tipsHard joints and thin tips trimmed awayNo woody pieces in the slice grade
Flesh and skinFirm, crisp, free of rot, dark patches or deep bruisingAn even ivory colour after drying
Air channelsMud washable from the channels; channels inspected before slicingNo soil in the holes, the lotus root defect a consumer actually notices

The last line is the one specific to lotus root. The 7–9 air channels that give the slice its wheel pattern also carry pond mud into the root. Every root is pressure-washed and its channels inspected before it reaches the slicer, and on arrival you can check the result yourself: split ten slices and look through them. The full acceptance check is in what a freeze-dried lotus root COA should prove.

How is a lot traced from Dong Thap to your container?

Through one region, one facility and one sealed reference sample.

  1. One source region. Every root comes from Dong Thap, sourced and coordinated by FruitBuys.
  2. One locked partner facility per contract. The qualified partner facility that processes your lot holds HACCP, ISO 22000, US FDA Facility Registration and BRC (qualified processing facility), and its food-safety system records each lot back to its intake and forward to its container. Any change of facility needs prior written notice and re-approval of your pre-shipment sample, and you have audit access.
  3. One lot, one COA. Every full-container lot ships with a COA from an independent ISO/IEC 17025 accredited laboratory.
  4. One sealed reference. A pre-shipment sample from the packed lot reaches you before the container sails, and a retained sample from every container lot is kept for its full shelf life, up to 24 months.

If a question comes up at your end months later, it can be answered against the same lot at ours.

What did Vietnam’s first lotus root shipment to Japan show?

That Dong Thap lotus root can meet one of the most demanding food markets in the world. In May 2024, the first commercial shipment of frozen lotus root from Dong Thap left for Japan: about 15 t in a 40ft reefer. Reports at the time described growing-area codes being set up for export roots and a geographical indication for Dong Thap lotus in progress.

That shipment was frozen, not freeze-dried, and the trade-offs between the two are in dried vs freeze-dried vs frozen lotus root. For a buyer, the signal is the same: Dong Thap lotus root is already moving into export programmes with traceable growing areas behind it.

What if your programme needs organic or single-farm lotus root?

If your pack must carry an organic logo, it needs a certified-organic supply chain, and FruitBuys does not hold organic certification for lotus root. If the concern is what is on the root, FruitBuys can run a multi-residue pesticide screen on your lot at an ISO/IEC 17025 accredited laboratory before the container is stuffed, with lead and cadmium per lot alongside if your market or retailer sets limits for aquatic and root crops. Those panels are matched to your market, and either paid by the buyer or shared according to volume.

For most food manufacturers and private-label buyers, a clean residue result on the actual lot answers the retailer’s question more directly than a farm certificate would.

FAQ

Where is lotus root grown in Vietnam?

Mainly in Dong Thap Province in the Mekong Delta, which has about 1,800 ha under lotus. All FruitBuys lotus root is sourced from Dong Thap.

When is lotus root harvested?

Roots are lifted 5–6 months after planting, once the leaves turn brown. Dong Thap growers stagger planting, so roots are harvested every month of the year.

Is lotus root available all year from Vietnam?

Yes. Staggered planting brings fresh roots to the line every month, so freeze-dried lotus root programmes run on scheduled call-offs.

Is Vietnamese lotus root the same as Chinese or Japanese lotus root?

It is the same plant, Nelumbo nucifera, sold as renkon in Japan and lotus stem in South Asia. Dong Thap roots are crisp and juicy, the type that slices clean and dries to an airy, crunchy slice.

Is the lotus root organic?

No. FruitBuys does not hold organic certification for lotus root. A multi-residue pesticide screen can be run on your lot before shipment.

Can I trace a lot back to its source?

Yes, to the Dong Thap source region and the partner facility that processed it. Each lot has a COA, a pre-shipment sample and a retained sample kept for up to 24 months.

Is lotus root the same as lotus seed?

No. Both come from the same plant in Dong Thap, but the root grows underground and the seeds grow in the pod above water. The seeds are on the freeze-dried lotus seeds page.
