Freeze-Dried Strawberries: Whole, Sliced, Diced and Crumble

FruitBuys Vietnam supplies wholesale freeze-dried strawberries in five formats (whole, halves, slices, dices and crumbles) from Da Lat fruit, at moisture ≤5.0% (typically 2.0–3.5%) and water activity ≤0.30. Trials start from one pallet of about 24 cartons; annual programmes run by the container at 3.3–5.5 t per 20ft.

The fruit is hulled, frozen and dried under vacuum with nothing added, so it keeps its red colour, its shape and a crisp, quick-melting bite, and stays shelf-stable for 12 months at ambient temperature with one word on the ingredient line: Strawberries. It is freeze-dried and packed at qualified partner facilities in Vietnam with lot-by-lot QC. For the full buying guide, see freeze-dried strawberries in bulk: supplier guide.

Every format comes from the same fruit; the cut decides how the strawberry shows in your product and how much fits in a container. Breakage, mixing and the right cut for each application are in freeze-dried strawberry formats and applications. Powder is a separate product: freeze-dried strawberry powder. Keeping pieces crisp in a frozen or cultured base is covered in freeze-dried strawberry for ice cream and yogurt; how freeze-dried compares with dried, infused and frozen strawberries is in freeze-dried vs dried strawberries.

Five freeze-dried strawberry formats: whole 20–35 mm and halves in 6 kg cartons, slices 4–8 mm in 7 kg cartons, dice 3–10 mm and crumble 1–5 mm in 10 kg cartons.

Only ripe, firm berries are washed and hulled, then laid in a single layer before freezing at −30 to −40 °C.

What the numbers do for you. Water activity at ≤0.30 keeps slices free-flowing through hoppers and dosing heads, keeps the red in the fruit and lets the product ship in a standard dry container. Dry-season fruit is firmer, sweeter and deeper red, which is why whole and sliced volume is best booked December to April; rainy-season fruit is brighter and more tart and makes excellent dice, crumble and powder.

The soft vacuum holds the pieces still at sea and the flat bag fits the carton, so you ship fruit, not air. Opaque foil keeps the red you approved. Bags of 1–5 kg are sized to one production batch: open a bag, use the whole bag. Loading options and freight per kilo are in freeze-dried strawberry packaging and shipping.

Limp, gently vacuumed foil bulk bags of freeze-dried strawberries lie in layers in a 5-ply export carton.
Each 1–5 kg foil bag is soft-vacuumed with food-grade silica gel inside and sized to one production batch.

Private label

Two routes, sealed in your design in a dehumidified packing room at the source. Digital print from 3,000–5,000 pouches per SKU takes 7–10 working days with no cylinders: the way to test a new market or several flavours. Rotogravure from 500 kg per SKU, about 20,000 pouches of 25 g, takes 15–20 working days and gives the lowest cost per pouch for repeat volume. FruitBuys supplies the ingredient line (Strawberries), the nutrition panel from your lot, Arabic label text for the UAE and carton labels for Amazon FBA.

Quality, certifications and documents

  • Lot-by-lot QC: every full-container lot ships with a COA from an independent ISO/IEC 17025 accredited third-party laboratory for moisture, water activity, total plate count, yeasts & moulds, E. coli and Salmonella.
  • Surveillance: lead, arsenic and aflatoxin (total and B1) tested periodically; reports on request.
  • Destination panels: EU pesticide multi-residue and hepatitis A / norovirus panels booked before the container is sealed, for programmes that need them.
  • Facility: HACCP, ISO 22000, BRC (qualified processing facility) and US FDA Facility Registration, with Halal certification available on request. Certificates and registration numbers are provided in the technical file at RFQ stage.
  • Sample to bulk: pre-shipment sample from your packed lot, retained sample for the full shelf life, one partner facility per contract with change control and audit access.
  • Export dossier: commercial invoice, packing list, bill of lading, lot COA, Certificate of Origin Form EUR.1, and a phytosanitary certificate with every shipment for fast clearance.

Import and labelling

  • HS code: 0813.40 for whole, sliced, diced and crumble; powder ships under 1106.30. Your broker confirms the national line, for the EU in the EU TARIC database.
  • EU and UK: fruit grown and dried in Vietnam enters at 0% duty with Form EUR.1 under the EU and UK trade agreements with Vietnam. Strawberries from Vietnam are not on the EU list of foods under increased border controls in Implementing Regulation (EU) 2019/1793, so containers move through routine controls.
  • Residues: results on the dried product are read through a processing factor of about 9–11 against fresh-fruit limits in the EU Pesticides Database; the lot COA states the finished moisture needed for that one-line conversion.
  • US and UAE: FDA Prior Notice and the importer’s supplier verification file for the US, with DDP quotes available; Arabic labelling and product registration through your importer for the UAE.

Verify the sample

  1. Pack: bag sealed and flat, desiccant in place, net weight matching the packing list.
  2. Product: colour within the agreed range, no green calyx, cut size and breakage as agreed; snap a slice within 60 seconds of opening and read water activity at ≤0.30.
  3. Your recipe: a short trial in your real base, checked at week 1 and week 4.
A gloved hand snaps a freeze-dried strawberry in two, showing a dry, airy pale-pink interior with crisp edges.
A true freeze-dried strawberry snaps with a clean crack and shows a dry, airy interior; a bend or a chewy pull means heat-dried fruit.

The RFQ template, sample approval and golden-sample routine are in freeze-dried strawberry RFQ and sample checklist.

FAQ

Do you sell freeze-dried strawberry halves or hearts?

Halves are a standard format. Other shapes, such as hearts for retail packs, are cut to order after a short cutting trial on your sample.

What is the minimum order?

One standard pallet for a trial (about 24 cartons), the container for annual programmes, and 3,000–5,000 pouches per SKU for digital-print private label or 500 kg per SKU on rotogravure.

Can I get a sample before ordering?

Yes. Development samples of the cuts you need are prepared in 3–5 working days; before each container you approve a 100–200 g pre-shipment sample from your packed lot.

Are freeze-dried strawberries gluten free?

Strawberries contain no gluten, and the ingredient is 100% fruit. The facility allergen statement for your gluten-free label claim is in the technical file.

What are freeze-dried strawberry bits used for?

Dice and crumble go into cereal bars, granola, bakery fillings, chocolate, ice cream and toppings, where they add real fruit, red colour and crunch without free water.

How long do freeze-dried strawberries keep?

12 months at ≤25 °C and RH ≤60%; 18–24 months in cool storage at ≤18 °C and RH ≤50%, in the unopened bag.
