Freeze-Dried Strawberry Powder
FruitBuys Vietnam supplies freeze-dried strawberry powder that is 100% strawberries, milled from freeze-dried Da Lat fruit to 60–80 mesh, or 100 mesh for drinks, with no maltodextrin. Moisture is released at ≤3.0% and water activity at ≤0.25. It ships in 20 kg cartons with a lot COA; trials start from 50 kg.
The ingredient line reads Strawberries: no carrier, no added sugar, no colouring. The powder brings natural pink colour, sweet-tart strawberry flavour, 21 g of fibre and 624 mg of vitamin C per 100 g to drinks, dairy, frostings, chocolate and bakery, and replaces synthetic red in light-coloured products at 1–3%. The full strawberry buying guide is in freeze-dried strawberries in bulk: supplier guide.

Freeze-dried or spray-dried: what is in the bag?
Three different products are sold as strawberry powder, so compare them on cost per kilo of strawberry, not per kilo of powder:
| Freeze-dried (FruitBuys) | Spray-dried | Flavoured blend | |
|---|---|---|---|
| Ingredient line | Strawberries | Strawberry, maltodextrin | Sugar or dextrose, flavouring, colour |
| Raw material | Whole fruit, freeze-dried then milled | Juice or purée sprayed onto a carrier | Little or no fruit |
| Colour and aroma | Natural pink-red, fresh strawberry | Paler; aroma reduced by heat | From flavouring and colour |
| Fibre and vitamin C | From the fruit | Diluted by the carrier | None to speak of |
| Dose for the same taste | Lowest | Higher, as much of it is carrier | Not comparable |
| Moisture pick-up | High (no carrier), handle below 40% RH | Lower | Lower |
Container orders run as a dedicated powder run: fruit freeze-dried and milled straight after on a closed chilled line, so an 11-tonne order is one continuous production. Trial and flexible lots are milled from export-grade slices and crumble of released lots, to the same limits. Reading a powder COA is covered in freeze-dried strawberry powder specification.

Which mesh? Beverage lines usually choose 100 mesh, which disperses faster in a shaker and leaves no grain on the tongue. Bakery and chocolate lines usually choose 60–80 mesh, which leaves visible red specks in a cake or a white-chocolate bar: the shopper reads them as real strawberry at a glance.
Soft clumps are what real fruit powder looks like. With no carrier, the powder is about half natural fruit sugar, and particles pressed together in the bag form light clumps that break with a stir or a sieve. The deeper drying margin at release is what keeps it pouring in a warm warehouse.

Applications and dosage
| Application | Typical dose | What it brings |
|---|---|---|
| Café and ready-to-serve drinks | 2–4% (8–12 g per 350–500 ml cup) | Real fruit colour and taste in a latte, tea or soda |
| Smoothie, shake and drink premixes | 3–8% | Flavour, colour and body from real fruit |
| Yogurt, dairy desserts, ice cream | 2–5% | Natural pink and a “made with strawberries” line |
| Frostings, creams, fillings | 5–10% | Strong strawberry taste without flavouring |
| Chocolate and compound coatings | 3–8% | Fruit in a fat-based system with no added water |
| Bakery mixes | 3–6% of flour weight | Flavour; colour holds best in acidic or filled products |
| Colour only | 1–3% | Pink that replaces a synthetic red in light-coloured products |
Dairy and frozen-dessert use, from ice cream bases to yogurt toppers, is covered in freeze-dried strawberry for ice cream and yogurt. For melts, puffs and infant cereals, the tighter baby-food specification and per-lot testing are in freeze-dried strawberry for baby food.
Replacing a synthetic red. The US FDA has asked the food industry to phase out petroleum-based dyes, Red No. 40 among them, by the end of 2026, and in the EU and UK foods coloured with Allura Red (E129) carry a warning about children’s activity and attention. At 1–3%, strawberry powder gives yogurts, frostings, white chocolate and drink mixes a natural pink with Strawberries on the label. Deep reds and long bakes take a higher dose.
How it behaves. The pink is anthocyanin and follows pH: bright in yogurt, smoothies and fillings, grey-violet in a batter raised with baking soda, so balance the soda with an acid or put the strawberry in a filling. In drinks it disperses rather than dissolving clear, because it is whole fruit with its fibre: use a high-shear mixer and a little pectin or gum in ready-to-drink products. In solid chocolate, add it with the sugar and milk powder before refining; at aw ≤0.30 it adds fruit without free water, so chocolate does not seize.
Cost in use = powder price per kg × dose × finished weight. A 100 kg batch of frosting at 8% takes 8 kg, under two 5 kg bags; a 400 ml café drink at 2.5% takes 10 g, so 1 kg covers about 100 cups. Sample formulations are in strawberry powder uses and dosage for food brands.

Quality and documents
- Lot-by-lot QC: every full-container lot ships with a COA from an independent ISO/IEC 17025 accredited third-party laboratory for moisture, water activity, total plate count, yeasts & moulds, E. coli and Salmonella. Lead, arsenic and aflatoxin are tested periodically, with reports on request.
- Trial orders: in-house release log plus the latest surveillance report; any independent test your QA needs is credited in full against your first container.
- Facility: HACCP, ISO 22000, BRC (qualified processing facility) and US FDA Facility Registration, with Halal certification available on request; certificates are in the technical file at RFQ stage. One partner facility per contract, with change control and audit access.
- Export dossier: commercial invoice, packing list, bill of lading, lot COA, Certificate of Origin Form EUR.1, and a phytosanitary certificate with every shipment for fast clearance.
Import and labelling
- HS code: strawberry powder is declared under 1106.30, flour, meal and powder of Chapter 8 fruit, not under 0813 like the pieces. For the EU, your broker confirms the national line in the EU TARIC database.
- EU and UK: fresh-grown Vietnamese fruit gives a clean Vietnamese origin, and Form EUR.1 claims the preferential rate under the EU and UK trade agreements with Vietnam. Strawberries from Vietnam are not on the EU list of foods under increased border controls in Implementing Regulation (EU) 2019/1793.
- Ingredient line: Strawberries on the standard powder; Strawberries, anti-caking agent (silicon dioxide) on the free-flowing version.
- US and UAE: FDA Prior Notice and the importer’s supplier verification file for the US; Arabic labelling and registration through your importer for the UAE.
Verify the sample
- Look and feel: even pink to red, seeds as agreed; free-flowing or soft clumps that break under a finger.
- Run it in your base: blend at 3–5% into milk, yogurt or your premix; it should disperse without grit and taste of fresh strawberry. For baked products, run one test batch to check the colour.
- Set up the filling room: ≤25 °C and below 40% RH, one 5 kg bag per batch, hopper covered. For open lines or auger heads running a full shift, specify the free-flowing version.
FAQ
What is freeze-dried strawberry powder?
Whole strawberries that are washed, hulled, frozen, dried under vacuum and then milled. Nothing is added, so the powder carries the fruit’s own colour, flavour, fibre and vitamin C, and the ingredient line reads Strawberries.
Is freeze-dried strawberry powder the same as strawberry powder?
Not always. Many strawberry powders are spray-dried juice on a maltodextrin carrier, or flavoured sugar blends. Freeze-dried powder is the whole fruit, so it tastes stronger at a lower dose and keeps a one-word label.
How long does freeze-dried strawberry powder last?
12 months at ≤25 °C and RH ≤60%; 18–24 months in cool storage at ≤18 °C and RH ≤50%, in the unopened bag. Once a bag is open, use it within the batch.
Does freeze-dried strawberry powder dissolve in water or milk?
It disperses rather than dissolving clear, because it is whole fruit with its fibre and seeds. 100 mesh, shear mixing and a little pectin or gum in ready-to-drink products give an even drink.
What is the HS code for freeze-dried strawberry powder?
1106.30, flour, meal and powder of the fruits of Chapter 8. The pieces ship under 0813.40.
Is it natural, with no added sugar?
Yes. The standard powder is 100% strawberries; the 52 g of sugar per 100 g is the fruit’s own.
Is FruitBuys a strawberry powder manufacturer?
FruitBuys Vietnam is a supply chain partner: it sources Da Lat strawberries, sets the process standard at qualified partner facilities that freeze-dry, mill and pack the powder, runs lot-by-lot QC and handles the export file, with one locked facility per contract.
