Freeze-Dried Cashew Raw Material Routes: Fresh Mature Kernel vs Commercial Low-Moisture Kernel

What does “raw cashew kernel” mean here?

This article concerns the shelled edible kernel of Anacardium occidentale L. It does not concern cashew apple, shell, testa or whole in-shell nuts. That boundary matters because composition, moisture, handling and process evidence can change when the material or preparation state changes. [1] [3]

The word “fresh” is especially unsafe in a technical brief. It can describe a recently prepared mature kernel with a high physiological moisture content, or it can be used loosely for a raw edible kernel that has already reached a normal commercial moisture condition. Route A: fresh mature cashew kernel

A 2024 peer-reviewed study on individual quick freezing of mature raw cashew kernels reported 47.13% initial moisture on a wet basis. The study examined fresh mature kernels associated with the Vengurla-4 cultivar in India and evaluated an IQF route. [1]

That figure is useful for defining a fresh-mature raw state and for building a theoretical dry-solids scenario. It is not evidence that a FruitBuys freeze-drying line uses the same material, pretreatment or process conditions. The study’s blanching and IQF conditions must not be copied into a freeze-drying specification.

For procurement, Route A means the incoming material carries a large amount of water before processing. The resulting mass-balance discussion is therefore a route-specific calculation. The Association of Food Industries lists 3–5% moisture as a conventional cashew-kernel industry reference under its U.S.-bound specification. This is a category and industry reference, not a finished freeze-dried cashew specification. [2]

The USDA FoodData Central Foundation Foods record for raw cashews reports 4.81 g water per 100 g edible portion. [4] A peer-reviewed multi-origin study reported 4.4 g water per 100 g for its Vietnam-origin sample. [3] Each number belongs to its own sample and method context. The technical consequence is different from Route A. A low-moisture kernel begins closer to the moisture condition used in conventional commercial handling. Any further freeze-drying step would remove less water than a process that starts with a fresh mature kernel.
