Freeze-Dried Pineapple Powder

FruitBuys supplies 100% freeze-dried pineapple powder (Ananas comosus) from Vietnam. The powder is milled to 80 mesh as standard, contains no carrier, and is packed in 20 kg cartons (4 bags of 5 kg). It is made for manufacturers of beverages, dairy, bakery, confectionery and dry premixes. Every lot is released at water activity ≤0.30, measured after milling and before packing. Every full container ships with a lot-specific COA.

Powder is the pineapple format that cakes first. For that reason, composition, mesh, moisture limits and carton are agreed with you before production. How to specify each point is set out in the freeze-dried pineapple powder buyer’s guide.

The US panel counts total carbohydrate, while the EU counts available carbohydrate and fibre at 2 kcal/g, so the same powder declares 367 kcal in the US and 351 kcal in the EU. On these values 100% pineapple powder supports “no added sugars”, “high fibre” and “high in potassium” in the EU; a free-flow grade or a blended SKU needs its own panel.

Which mesh for which application

ApplicationMeshWhy
Smoothie, juice and instant drink mixes100–120 meshDisperses fastest, but needs the tightest pack
Yogurt, ice cream, dairy desserts80 meshSmooth in cold bases; pilot first for the bromelain effect
Bakery fillings, icings, cake and dry premixes60–80 meshFlows better and cakes less
Confectionery, gummy centres, seasoning coatings80 meshPectin or starch systems; not gelatin

For a first order, start at 80 mesh and move finer only if a trial shows grit. Pineapple contains bromelain, a natural enzyme that freeze-drying does not switch off. Bromelain can thin unheated dairy or gelatin products, so test the powder in your own recipe through its shelf life. When the consumer needs to see real fruit, use freeze-dried pineapple dice or chunks.

Packaging

OptionDetail
Bulk bag5 kg sealed aluminium-foil PE bags, gently de-aerated with a food-grade desiccant sachet, no nitrogen; 1–5 kg or other sizes on request
Export carton5-ply, 58 × 28 × 34 cm, 20 kg net (4 × 5 kg bags)
Retail / private label30 g, 50 g, 100 g, 500 g aluminium-foil zip pouches, or as requested

Four 5 kg bags per carton mean that opening one bag exposes only 5 kg to room air. Finer grades are fluffier, so a trial pack confirms the 20 kg fill before you plan the container. When you compare quotes, check the composition line first. A powder with a carrier contains less pineapple per kilogram, so compare the cost per kilogram of fruit solids, not per kilogram of powder.

Quality and documents

  • Lot COA per full container from an ISO/IEC 17025 laboratory, with lot code, method, limit and result for the core release set: moisture, water activity, particle size, total plate count, yeasts and moulds, E. coli and Salmonella
  • Baseline surveillance reports from periodic third-party testing: lead, arsenic and aflatoxin; reports available on request
  • Trial and LCL orders: factory in-house release QC report plus the latest baseline report; third-party testing of the trial lot at net laboratory cost, credited back in full against the first full-container order
  • Extended and market tests (Listeria, Enterobacteriaceae, cadmium, pesticide multi-residue, ethephon for EU-bound shipments): coordinated with ISO/IEC 17025 laboratories in Vietnam before stuffing, 3–5 working days
  • Pre-shipment sample: 100–200 g in two sealed foil pouches with desiccant, drawn from the packed lot and sent by courier within 24–48 hours
  • Signed reference sample, and a retained sample from every container lot held for the full shelf life (up to 24 months)
  • Facility certification: HACCP, ISO 22000, BRC (qualified processing facility), HALAL and US FDA Facility Registration at partner facilities. Certificate numbers, scope and expiry are provided with the quotation.
  • Export documents: EUR.1 certificate of origin, and a phytosanitary certificate with every shipment as part of FruitBuys’ standard export dossier

Import and labeling

  • HS direction: 1106.30 under Harmonized System heading 11.06 (flour, meal and powder of Chapter 8 fruit) for 100% pineapple powder. A carrier or other ingredient can change the heading. Do not copy the code used for pieces (0804.30).
  • EU origin: ship with an EUR.1 certificate of origin to claim the EVFTA preferential rate for 1106.30 shown in the EU tariff database (TARIC).
  • Ingredients: 100% pineapple by default. If you order the free-flow grade, silicon dioxide must appear on your ingredient list.
  • Ethephon is the residue EU borders check on pineapple. How limits and border checks work is covered in why do EU borders reject pineapple?

Verify the sample

  1. On arrival, check water activity (≤0.30) and moisture (≤4.0%) against the COA.
  2. Compare mesh and flow with the signed reference sample.
  3. Check every bag seal and confirm the desiccant sachet is present and dry.
  4. For dairy or gelatin products, run a pilot for the bromelain effect through your full shelf life.

FAQ

Is the powder 100% pineapple?

Yes, by default: no carrier, no added sugar and no anti-caking agent. A free-flow grade with up to 1% silicon dioxide is available on request.

Is pineapple powder the same as freeze-dried pineapple powder?

Not always. Many pineapple powders are spray-dried from juice with 30–50% maltodextrin as a carrier, which dilutes the fruit and changes the label. FruitBuys powder is freeze-dried pineapple milled to 80 mesh, 100% fruit by default.

Which mesh should I choose?

Use 80 mesh for most uses. Choose 100–120 mesh for instant drinks and 60–80 mesh for bakery and premixes.

Why does pineapple powder cake?

It is about two-thirds natural sugar and picks up moisture from humid air: around 70% RH, exposed powder starts to crust within 30–60 minutes. Keep bags sealed, open them only in dry conditions, dose straight from a freshly opened bag, and use opened bags within 7 days.

How long does the powder keep?

12 months at ≤25 °C, RH ≤60% in the original unopened foil bag with desiccant; 18–24 months in cool storage at ≤18 °C, RH ≤50%.

Can I use it in yogurt?

Yes, after a pilot. Bromelain stays active after freeze-drying and can affect protein-based products during their shelf life.

Do I get a COA for my lot?

Yes, for full-container orders. Trial and LCL orders ship with the factory release QC report and the latest baseline surveillance report.

Can you pack under our brand?

Yes, OEM/ODM from 500 kg per SKU.
