
Freeze-Dried Cashew
This guide covers edible cashew kernel from Anacardium occidentale L., not cashew apple or shell. Freeze-dried cashew qualification should begin by identifying the raw-material route, then move through route-specific conversion, separate moisture and Aw controls, finished-format definition, nutrition evidence, exact-product process records, packing qualification and package-specific stability review. What product is being evaluated?
The product scope is freeze-dried cashew kernel. The kernel is the edible portion considered for B2B ingredient, inclusion, topping, snack or further-format development. Cashew apple and shell are outside this product page’s scope.
The raw material should not be described only as “fresh cashew.” That wording can hide a material difference between a fresh-mature kernel state and a commercial low-moisture/raw dry kernel state. The two states lead to different moisture-removal, conversion and nutrition-reference questions.

Which decisions matter before approval?
A freeze-dried cashew project is not one decision. It is a sequence of linked decisions with different evidence owners.

1. Raw-material route comes first
The project distinguishes a fresh-mature kernel route from a commercial low-moisture/raw dry kernel route. These are not interchangeable labels for the same technical starting point.
A fresh-mature state generally creates a different water-removal and pretreatment question from a low-moisture commercial kernel. A low-moisture research reference may be useful for one route and misleading for another. The buyer should record the actual incoming state, moisture basis, product identity and lot or sample reference before comparing conversion or nutrition data.
Review the raw-material route definition for the full route boundary. This Pillar does not select the commercial route or claim continuity of supply.
2. Conversion ratios are theoretical, not commercial yield
Freeze-drying conversion depends on the water and dry-solids basis of the starting material. A fresh-mature input and a commercial low-moisture input will not produce the same theoretical input ratio when the calculation uses their respective moisture states.
The calculation can help R&D estimate a dry-solids scenario or compare route assumptions. It cannot establish sellable yield, process efficiency, rejects, fines, breakage, recovered mass or released mass. Those outputs require an identified pilot or production record.
Use the freeze-dried cashew conversion ratio page when the project needs the route-specific calculation. Do not copy a theoretical ratio into a commercial yield claim.

3. Moisture and water activity are separate QA controls
Moisture and water activity (Aw) should be specified and measured as separate controls. The current internal development targets are 3–5% finished moisture and Aw <0.30. They are not presented here as verified production-lot results.
Moisture describes water content on a stated analytical basis. Aw describes water availability in the product matrix under measurement conditions. A moisture result cannot prove a specific Aw value, and an Aw result does not replace the agreed moisture control. The buyer should request sample or lot identity, method, basis, measurement temperature and package condition where relevant. [1]

4. Choose a recognized form or define a custom format
Whole, Butts, Splits and Pieces are recognized conventional cashew forms under the cited industry terminology. Granules, dice, powder, flour and meal-style formats require buyer-supplier definitions rather than automatic grade assumptions. [2]
The buyer should connect the form to the intended application and state how the finished sample will be measured. A conventional form name does not prove post-freeze-drying breakage, density or application performance.
For a custom request, define nominal dimensions or particle basis, tolerance, whole/broken/fines treatment, intended application, sample basis, packaging state and acceptance method. Review grades and OEM formats before requesting a sample.

5. Use nutrition data as research context, not artwork
Nutrition references must remain attached to their source, sample state and raw-material route. USDA raw-cashew data and the Rico Vietnam sample provide different reference contexts; they should not be blended into one finished freeze-dried cashew profile. [3] [4]
A research reference can help R&D scope laboratory work and identify which composition fields require testing. It does not create exact-SKU Nutrition Facts values. A calculated normalization factor can support a stated dry-solids comparison, but it does not measure nutrient retention through freeze-drying.
Before artwork or a formal SKU declaration, require exact-SKU laboratory analysis after the route, process, format and product identity are locked. Review the nutrition evidence page for the permitted use of the available datasets.
6. Require an exact-product process dossier
No exact Freeze-Dried Cashew production cycle is established in the current evidence. The Shinde study reported 85°C blanching for 5 minutes before IQF in a fresh-mature cashew study. That detail belongs to the IQF study and is not a freeze-drying setting. [5]
Before accepting a process claim, require a dossier that identifies the raw route, incoming moisture, finished format, pretreatment, pre-freezing endpoint, batch identity, shelf/product temperature history, chamber pressure, primary and secondary drying records, durations, endpoints, deviations and pre/post mass.
The dossier should connect the same batch to final moisture, direct Aw, format, breakage, rejects, fines and other agreed finished-quality evidence. Review process qualification for the value-free cycle-log checklist. This Pillar does not publish an exact cycle or process-superiority claim.
7. Qualify packing by finished format
A 60 × 39 × 39 cm carton has 91.26 L of external geometric volume. That number does not equal usable internal product volume because board thickness, inner packaging, closure and headspace reduce the available fill space.
A cited conventional-cashew engineering study reported 559.3–719.6 kg/m³ at 5% moisture. Those values are context for conventional kernel, not measured freeze-dried cashew density. [6] The current 15–20 kg/carton figure is an internal packing-trial target, not a validated capacity or approved net weight.
Before locking net carton weight, test the actual finished format and package. Record loose or tapped density where relevant, inner-bag dimensions and material, fill mass, fill height, headspace, seal condition, breakage and fines before and after packing, transport simulation and residual oxygen only where controlled. Review bulk-density and carton-packing qualification for the trial design.

8. Treat shelf life and oxidation as package-specific decisions
The current 12–24-month figure is an internal development objective, not an established shelf-life result for an exact freeze-dried cashew SKU and package. The governing evidence also does not establish that freeze-drying prevents oxidation in this product.
A stability review should identify the exact SKU, lot, format, package material, seal condition, storage conditions, sampling schedule, physical and sensory criteria, moisture/Aw where relevant, justified oxidation indicators such as peroxide value or free fatty acid, package integrity and predefined acceptance criteria.
Review shelf-life and oxidation evidence before accepting any duration or oxidation statement. This Pillar does not publish a fixed shelf life, storage guarantee or oxidation-performance result.
9. Coordinate the final buyer review
Procurement, QA, R&D and Packaging should not review the product as if one document can answer every question. The final decision should show which evidence has been accepted, which item remains conditional and which issue has been routed to the canonical owner.
