Freeze-Dried Jackfruit Powder
Freeze-dried jackfruit powder is ripe, deseeded jackfruit that is freeze-dried and then milled into a fine powder. FruitBuys supplies it as 100% jackfruit with no carrier: no maltodextrin, no added sugar and no anti-caking agent unless your formula calls for one. That gives beverage, dairy, bakery and nutrition manufacturers the full tropical flavour of jackfruit on a single-ingredient label.
Most fruit powders on the market are spray-dried onto a carrier, which can make up a large share of the powder. Before you compare quotes, check the ingredient line: a carrier powder and a 100% powder are different products at different strengths. Our guide to specifying freeze-dried jackfruit powder explains what to lock into the specification before you buy.
Product specification
| Item | Specification |
|---|---|
| Product | Freeze-dried jackfruit powder |
| Ingredient | 100% ripe jackfruit (Artocarpus heterophyllus Lam.), deseeded; no carrier, no sugar added |
| Raw material | Thai jackfruit cultivar, selected at 18–24 °Brix |
| Origin | Vietnam: Tien Giang, Hau Giang, Dong Nai and the Central Highlands; available year-round |
| Appearance | Fine, free-flowing powder; pale golden yellow; aroma and taste of ripe jackfruit |
| Foreign matter | In-line rare-earth magnets (≥10,000 gauss) and metal detection (Fe, non-Fe, stainless steel) |
| Particle size | 60–80 mesh standard; 80–100 mesh for beverages, 40–60 mesh for seasonings |
| Moisture | ≤4.0% |
| Water activity | ≤0.30 contract limit (factory release target ≤0.25) |
| Total plate count | ≤10⁴ CFU/g |
| Yeasts and moulds | ≤10² CFU/g |
| E. coli / Salmonella | <10 CFU/g / not detected in 25 g |
| HS code | 1106.30 for 100% powder; blends with a carrier or anti-caking agent move to 2106.90 |
| Shelf life | 12 months at ≤25 °C, RH ≤60%; 18–24 months in cool storage at ≤18 °C, RH ≤50%, in the original unopened bag |

What this means for you: jackfruit is about 70% natural sugar on a dry basis, which makes the powder strongly hygroscopic. Water activity, packaging and how fast your plant uses an opened bag decide whether it stays free-flowing.

Applications
| Use | How the powder works |
|---|---|
| Smoothie and beverage mixes | Disperses in water and milk; dose by flavour trial |
| Yogurt, ice cream, dessert powders | Natural colour and aroma without heat notes |
| Protein and nutrition blends | Single-ingredient fruit flavour for clean-label formulas |
| Bakery fillings, creams, frostings | Adds flavour without extra water |
| Chocolate and confectionery coatings | Use in dry fat-based systems |
| Cereal and snack seasonings | Apply as a dusting on dry products |

Add the powder to dry mixes last and keep it away from humid air during blending. For visible fruit pieces, use freeze-dried jackfruit bulbs or dice instead.
Packaging
| Option | Detail |
|---|---|
| Bulk | Standard: 4 × 5 kg PET/AL/LLDPE barrier bags per 20 kg master carton, heat-sealed with desiccant; your line opens one bag per batch while the other three stay sealed. 1 kg bags on request |
| Retail / private label | 30 g, 50 g, 100 g, 500 g aluminium zip pouches, gently de-aerated with a desiccant sachet (no nitrogen flush), or as requested |
| Carton | 58 × 28 × 34 cm, 20 kg net |
Powder is milled and bagged in a packing room held at 20–24 °C and RH ≤35–40%, so it does not pick up moisture at the filling hopper. Every bag is gently de-aerated, never pulled to a hard vacuum that would press the powder into a block, and sealed with a desiccant sachet inside; no nitrogen is used.

Container payloads are planning values; the stuffing plan fixes the final count. A 40 ft container of powder reaches the road weight limit before it is full: in the US, federal gross vehicle limits typically cap cargo at about 19,000–20,000 kg without an overweight permit, so plan the load to your inland route. Powder at 20 kg per carton fills a container by weight long before it fills it by volume, so freight per kilogram is far lower than for freeze-dried pieces.
Quality and documents
- Lot COA with every full-container order: moisture, water activity, total plate count, yeasts and moulds, E. coli and Salmonella. Particle size is checked at release.
- Baseline surveillance: periodic third-party testing for lead, arsenic and aflatoxin tracks long-term process capability. Current reports are available on request.
- Trial and LCL orders: free in-house release QC log (moisture, water activity, sensory) plus baseline reports. Third-party batch testing runs at net laboratory cost and is credited back in full against your first full container.
- Extended tests: pesticide multi-residue, nutrition panel and Listeria, arranged at an accredited laboratory of your choice, such as Eurofins or SGS in Vietnam, before the container is sealed.
- Retained samples from every container lot, kept for 24 months.
- Certifications: HACCP, ISO 22000, BRC and US FDA food facility registration, with Halal certification available on request; certificate copies and registration numbers are part of the pre-contract technical dossier.
- Standard export dossier with every shipment: phytosanitary certificate, certificate of origin (EUR.1 for the EU and UK), lot COA and commercial documents; for the UAE, the export health certificate as well.

Import and labeling
- HS code: heading 11.06 of the Harmonized System covers powder of the dried fruits of Chapter 8, so 100% jackfruit powder is 1106.30. If you add a carrier or anti-caking agent, the product moves to 2106.90 and the duty changes, so the ingredient list and the HS code must be decided together.
- EU and UK: EUR.1 proof of origin carries the EVFTA or UKVFTA preference; the label lists jackfruit as the single ingredient with a nutrition declaration per 100 g.
- United States: FruitBuys supplies the facility’s US FDA registration number; the importer files an FDA Prior Notice for each shipment and keeps its FSVP file.
- Label: “jackfruit” or “freeze-dried jackfruit” as the single ingredient. Sugars must still be declared, even with no sugar added.
Verify the sample
- Ingredient check. Pale golden powder with ripe jackfruit aroma; a flat, sweet-only taste suggests a carrier.
- Free flow. Tip the powder from the bag: it should pour without lumps. Hard lumps point to moisture pick-up or a damaged seal.
- Moisture and water activity. ≤4.0% moisture and aw ≤0.30 on a freshly opened bag.
- Mesh. A sieve test at your specified mesh (standard 60–80 mesh).
- Dilution flag. A low total ash result in your QC lab is a fast check for maltodextrin; send the sealed second pouch to your laboratory and compare with the lot COA.

FAQ
Is this powder 100% jackfruit?
Yes. It contains no maltodextrin, no added sugar and no anti-caking agent unless you specify one (silicon dioxide 0.5–1.0%, tricalcium phosphate or rice hull concentrate), in which case it is declared on the label.
Why does fruit powder cake, and how do I prevent it?
The natural sugars pull moisture from the air. Keep bags sealed, store below 25 °C and 60% relative humidity, and use opened bags quickly.
What mesh size do you supply?
60–80 mesh as standard; 80–100 mesh for beverages and 40–60 mesh for seasonings. We do not mill finer than 100–120 mesh, because jackfruit powder cakes too fast beyond that.
How much powder fits in a container?
About 11,000 kg in a 20 ft container floor-loaded, at 20 kg per carton.
Is freeze-dried powder better than spray-dried?
It keeps flavour and colour better and needs no carrier. Spray-dried powder with a carrier costs less per kilogram, but contains less fruit in each kilogram.
